Cheesecake Stuffed Strawberries

What’s Out? Chocolate Dipped Strawberries!


That’s right! I am here to tell you that these little babies have officially replaced Chocolate Dipped Strawberries…well maybe not nationally (yet) but they have here in my household! These are delicious! I made them for Jorge’s birthday dinner Friday night! They are perfect as a make ahead dessert (but only around 24 hours ahead)! They look so impressive and would be perfect to bring to a dinner party, or as a sexy dessert with some champagne! Tomorrow I will be putting in a lot of time on some cupcakes (check back to see those tomorrow) and I really wanted to make two desserts, so when I saw these I knew they were perfect! I was told about this great idea from a girl on a food board… her screen name is ARO1018. She posted a picture and the general idea…and I knew I had to make them and share them with all of you!

You will need:
2 crates of fresh Strawberries
1 box Jello No Bake Cheesecake (yes, please feel free to make your own delicious cheesecake filling, but I did not have the time…and this one was Awesome!)
Crushed Graham Crackers
Milk Chocolate for drizzling!

Start by washing your strawberries and cutting off the tops. Next you will need to hollow out the strawberries as shown in the photo below. I tried a few different methods, a spoon and a knife, and ended up finding that a potato peeler was PERFECT for this! The nice pointed, angled tip worked wonderfully!

Then mix the cheesecake filling according to the box and using a decorating bag and a large tip fill each strawberry till it is slightly overfilled.

Place the crushed Graham Crackers in a small bowl and dip each strawberry into the Graham Crackers.

Lastly heat up your milk chocolate for 10 second intervals (in a bowl) until the chocolate is melted thoroughly. Spoon the melted chocolate into a ziplock sandwich bag. Cut off a very small tip and squeeze the bag as you would a decorating tip. The chocolate will come out in a perfect stream for drizzling on top of the strawberries! Enjoy!
