For me, the main problem with most of the mug cake recipes I’ve tried boils down to one thing: texture. It’s not too hard to get a cake that’s sweet enough, or moist enough, or flavorful enough. The problem is getting it light and fluffy.
It took me a long time to figure out how to get rid of the bad, spongy texture of most mug cakes. The “lightbulb moment” came when my friend, Erin, posted a recipe she came up with for banana nutella microwave brownie. I noticed that it didn’t contain any eggs, and that just made sense to me. So I tried making mug cakes without egg as well, and voila! The texture problem was fixed!
What Is a Good Substitute for Milk in a Mug Cake?
Okay, so a lot of mug cakes call for a little bit of milk, including this one. But if you don’t have milk on hand, or just need a dairy-free recipe, you can totally substitute. Any non-dairy milk substitute, or even just water, will work. You can use unsweetened brewed coffee, to help deepen the flavor of the chocolate and make it almost like a mocha cake.

- Use a Big Mug: Make sure you use a roomy mug so that the batter doesn’t overflow.
- Stir Well: You don’t want to end up with dry bits of flour or baking powder in your cake, so be sure to stir the batter really well. A mini whisk makes this super easy, but a fork will also work.
- Mix-Ins: Sometimes I like to stir in mini marshmallows or some chopped walnuts to add a little something different. Add both, and it’s like a Rocky Road Mug Cake.
- Toppings: Feel free to add a scoop of ice cream, powdered sugar, or even some chocolate frosting to this cake when it’s done. Or add a dollop of whipped cream and a peanut butter drizzle, like you see here in the photos!
Storing Leftover Mug Cake
I can’t imagine you will have leftovers! But just in case, yes you can store a leftover chocolate peanut butter mug cake! Allow it to cool completely, then cover it with plastic wrap (or scoop it out and transfer it to an airtight container). Refrigerate for up to 1-2 days.
If you’d like to reheat it, just place it in the microwave for a few seconds! Be careful not to overcook it, or it might get tough or dry.

I’ve never made nor seen a mug cake recipe with an egg in it. That’s absurd.
While the texture of this eggless recipe was a pass (and the same as other recipes I’ve tried), it tasted like crap. It was not sweet at all, not chocolatey and not peanut butter-y in the least. Just make a real cake and exercise some self control, folks.

Agreed! So bitter and it stayed the same texture as when I mixed it, even after four minutes of microwaving in 30 second intervals. So weird. Maybe it was the age of my cocoa, but I’d at least double the sugar next time!
Sub 1/2 the sugar for brown, ditch the cocoa and it tastes exactly like a classic PB cookie.

In a word, AMAZING. I have found that in my generously-sized coffee mugs, this cake rises & stays pretty – doesn’t deflate a bit. Silky crumb. SO yum.
On a whim, I once subbed unsweetened natural strength lemon powder in for the cocoa and raspberry jam swirled in for the peanut butter… Lol-do NOT do that! Not a good idea. Not at all

The only recommendation I have is to use sugar that's fine or use honey instead. I used granulated sugar but I could feel the crunch of the crystals in my mouth while eating the cake (not entirely unpleasant but unexpected).

This was perfect! I didn’t have enough cocoa powder so I used Ghirardelli white chocolate powder instead. Def need to cook a tiny but longer because of that but omg so good. I changed it up and used cookie butter and mini marshmallows then tossed a spoonful of cookie butter on top afterwards. I needed this after trying to break my leg hours earlier!
Can i use this without the cocoa or use a substitute for cocoa powder?
If you wish to remove the cocoa powder, I would add more flour in it’s place or the dry to wet ratio will be off.
Couldn’t believe it would work but it was fab. Made it in a small Pyrex bowl and it served two with ice cream. Hubby was amazed at how quickly I made us dessert. Only change was I cooked it for 1 min 30 seconds on 900w

Mug cakes are inherently dry, but this was the driest one I’ve every made! I followed the recipe exactly, even added a bit more milk, but when I took it out, it literally crumbled in my fingers. Needs more liquid.

I added 2 tablespoons of crunchy peanut butter and less oil and milk. It was a delicious looking paste after mixing and I considered rolling it into truffles and then rolling them in shredded coconut.
But alas it was late in the day so I just microwaved it and ate it.
However I may transform it into truffles in future! Double recipe :)

Yup, yup, yup…best mug cake so far. My son and I have been experimenting and this has been the best consistency. I added a few chocolate chips on top, and used crunchy peanut butter. I wouldn’t use crunchy, since microwaving the peanut chunks made them kinda chewy, but definitely a must for chocolate + peanut butter lovers.

Did you possibly miss the addition of the vegetable oil? The milk and vegetable oil add up to over 1/4 cup of liquid so it shouldn’t be hard to stir. Glad it still turned out well for you!

This was great! I added some tollhouse mini morsels to give it a little more chocolate goo. For some reason a lot of the peanut butter flavor sunk to the bottom, but if you give it a good mix, it’s just right! Pretty sure I ate it a little too fast…

I just tried this recipe and I am so impressed! I ended up doing 1 minute and 20 seconds for my microwave and then drizzled some dark chocolate syrup on top. It tasted like fluffy fudge!

I just made this recipe. I used a 1000 watt small microwave, followed the instructions exactly. The cake was ok but came out somewhat dry and did not have enough chocolate flavor for me. I will try the recipe again and use less cook time or add more peanut butter and perhaps some chocolate chips, to see if this helps it to not taste so dry.
I have made many cake or cookie in a cup recipes. For those who have to work and take their lunch, you can make these recipes in a wide mouth Mason jar, place a lid on it and then take it to work or school, for a quick snack or lunchtime dessert.
Used about a tsp more milk (maybe a little bit more) because it seemed really thick. I feel like this would taste better if there were chocolate chips in it, it was really delicious but at the same time it was bland, and i think if a little something was added it would just bring out the true tastefulness of this cake.

I used to make this recipe all the time, and I was feeling down tonight so decided to make it again.. I was out of creamy pb so I had to borrow some chunky pb from my roommate and I threw an extra glob in the middle of the batter so it just kind of melted in the center of the cake and it turned out awesome.

My husband is a dessert junkie. Often times I don’t have time to make him dinner as well as a dessert. I came across this recipe a couple of months ago. It was okay but I thought it should have some egg in it. Since I make cakes a lot, I knew of a way to put just a tad bit of egg into this recipe without wasting a whole egg. I added 1/2 tsp of meringue powder to the recipe and I think it comes out perfect!

As of today, I have made this three times. After seeing how good it was the first time, I quadrupled the recipe and started putting the mix into ramekins. Quadrupling allows me to do 6 ramekins, for sharing … Or for eating the next day.
I played around with it as well, now I really load it up with peanut butter, which I think makes it super moist. I also put in some chocolates and marshmallows for the sheer fun of it.

I found this recipe whilst browsing for something to help with my peanut butter and banana craving. Just made it for myself and my husband, I added a 3rd mashed banana to each and a teaspoon of peanut butter on top and pushed down slightly just before microwaving which resulted in a yummy melted peanut butter core. Used the rest if the banana as slices on top. Totally hit the spot and hubby was impressed too x

It would loose some of the creamy factor, but I don’t think it would be totally awful. However if you are just trying to avoid lactose – you could definitely use coconut milk or almond milk instead!

This was so good! I’ve tried a couple of mug cakes lately this was by FAR the best, great texture and nice and chocolaty without being overly sweet. I used butter instead of oil because I don’t like the taste that you get with oil, I also decided to put the peanut butter in the middle of the batter not mixed in which was so good it came out all gooey and yummy. I microwaved mine for 1 minute in a 1100W microwave and served with some cream on top. This was so perfect I’m actually contemplating another!! THANKYOU!!

I’ve tried mug cakes before, which would satisfy most chocolate cravings but not a cake craving since they all turned into funny-textured mounds of chocolate chew, but in desperation, I thought I’d give it a try. Plus, peanut butter is good for babies. Or something.

This cake did not disappoint! I wanted a small helping of dessert and I luckily found this. I substituted whole wheat flour and Splenda for the flour and sugar and it was still very good. Of course, with a little scoop of vanilla ice cream it was AWESOME!

I just made this!!! It is perferction. It is chocolatey and it melts in my mouth and since I used chunky peanut butter, the nuts added texture to make it my most successful first try in “baking” ever!

It’s a snowy night. We’re stuck and home and I really wanted chocolate something. I saw this and 3 minutes later we were eating delicious, warm chocolate cake! This was outstanding! Not too much peanut butter and the perfect amount of chocolate. I added a few chocolate chips and pushed a kiss down in the center. It made for a really nice creamy center almost like a lava cake. Thanks so much for this!

just made this and it was AMAZING. perfect texture, like normal cake! i used about a tablespoon of PB2 (powdered peanut butter) and some mini semi-sweet chips and it was perfect. Maybe i’d add a little more peanut butter next time, but so great, didn’t even taste like a mug cake! great job.

Just tried these and they came out perfect! I worried about them spilling over but they didnt. I added some more chocolate and chopped hazelnuts. Will use a little bit less flour next time though. Thanks for a great recipe!

So Yummy! I actually love it the way it is but when craving a little extra pb, I put a glob in the middle just before microwaving then it sorta makes it a little lava cake almost.
This is by far the best cake mug recipe I’ve found. The texture is perfect– you really did avoid that awful spongy texture you described!
NOTE: For those having difficulties, I strongly suspect you’re measuring flour improperly. Most people do. You CANNOT scoop it out of a bag into a tablespoon and call it done! That will pack the flour densely result in almost twice as much flour as you need. Your cake will be ruined. Pour the flour into the tablespoon from another spoon, then gently level off with a straight edge (back of a knife words great). The light, fluffy flour will be the right amount. Google if you don’t believe me– there are tons of resources for how to measure flour properly. While you can get away with doing it the wrong way in a big cake, in a mug cake the tiniest mistake makes a BIG disaster.
I just made this, was so excited after reading all the reviews. It was bad. It was bland, no peanut butter taste at all and was a dry cumbly mess, and definitely not sweet enough. Sorry, I wanted to love it. :(
Tried these a minute ago and followed the recipe perfectly, it was…..edible I suppose. It was not moist enough, and kind of tasted like eating a piece of bread but not even that moist.. Sry I personally didn’t like it at all.

Oh my goodness. Being on bed-rest and having a sweet tooth, I immediately thought of a mug cake. I substituted hot chocolate mix for the cocoa powder and it is so good. I will definitely be making this again. Thank you so much for this post.

I had heard about these fun little recipies recently, but never bothered to give them a try. Glad to have come upon this recipie first, as the finished product was FANTASTIC. I used crunchy peanut butter, so the nuts gave it a nice soft crunch.
I doubled the recipie to make it for my boyfriend and i. Now, maybe i just have big mugs, but dare i say you can even quadruple this recipie?! Each mucch was a little less than half full of this light, fluffy bit of heaven, when doubled.

Quite excellent! I’ve made it 3 times. Must have ice cream on top, or at least a big glass of milk. I did only make one before with egg and I like that too, but I appreciate what you are saying about this more velvety soft crumb. My friend has egg allergy and this is excellent for her.

I just made this for my wife. She was craving something sweet and hot. This recipe delivered! Next time I think I’ll add a bit of chocolate candy in the bottom or middle then invert on a plate.
I’ve only ever made one other chocolate cake in a mug but I have to say your recipe tastes a lot better and the the texture is better too. My only problem is I wish it was sweeter so the next time I’m adding more sugar to it, and perhaps some chocolate chips too.
First time making a mug cake. The texture-which to people seemed like a problem in general for a mug cake- was very soft and fluffy. However, there wasn’t much taste. I was hoping for a chocolately, creamy with a touch of peanut butter, but had none. It’s decent and i don’t really mind stuff, but i thought i’d share. Perhaps i should add a handful of chocolate chips on top or so? Thank you anyways!
I think I hate you! This is a seriously chocolately rich yummy cake. My 1990s microwave needed 1.30 minutes but I think a little less time next time will make it moister and yummier. The biggest downside is that I always have these ingredients in and my will power is non-existence…

I love this recipe! I have one question though. Should it actually read baking soda? The first time I made it I used baking soda and it came out great. The next time I realized it said powder and I adjusted accordingly, but it didn’t rise. I knew one made things rise and one didn’t but I wasn’t sure which was which. :) Thanks for sharing your recipe!
Best mug cake I’ve ever made! The texture is just like real cake.
I used crunchy peanut butter and the peanut pieces were great. I also added in some chocolate chips for extra chocolatey goodness! My microwave is pretty powerful so I only cooked it for 45 seconds but I liked how I didn’t have to worry about thoroughly cooking it like I do for recipes with egg in them.

Yay a mug cake with no egg! I always crave cake when I have run out of eggs.
I substituted with cashew nut butter as the kids ate all the peanut butter. I also replaced the oil with extra milk as there is oil in the cashew nut butter.
I mixed all the dry ingredients then mixed in the milk before adding the cashew nut butter.
I had fantastic results. Much lighter than other mug cakes I have tried

Hi there… I am pregnant and craving for chocolatey peanut buttery goodness.. but I am on modified bedrest advice by d doc. So I cant drive to my fav cupcake store or make a full blown cake [i bake alot before this.but a full blown cake is too much work. i am supposed to be in bed.. not standing by a mixer..huhu..] but this is PERFECT!!!! 3mins standing at the counter and I am back in bed with a warm mug in my hand… Love it!! I bake it in a large mug and it does not deflate as u said.. I add choc chunks for extra goey-ness. I want to add nuts the next time I bake this.
btw, i use the baking time to clean up and keep things back in the cupboard. No mess!! Super perfect!!!!!!

Would this still work without the peanut butter? I’ve actually made this several times and it’s the best mug cake I’ve had hands down. But I was thinking about possibly making little gifts out of this. Putting the dry ingredients in a bag with a mug for a gift with a list of the wet ingredients and directions. But i’m wondering for those that don’t like peanut butter if it would still turn out as good without it.
What a cute idea Jaimee! To be honest, I have never tried it without peanut butter. I would test it and see what you think. If you take out the peanut butter, you might want to up the oil just a little.
Or, you could suggest they use Nutella in place of peanut butter if that’s not their thing!

Love this mug cake!!! Not a huge fan of chocolate, but this had a great consistency and love the peanut butter. I was out of butter so used coconut oil. Can’t wait to try again! Also subbed in one TB of brown sugar. So yummy. Thank you!
I made this with a couple of modifications and loved it! I used almond butter and grapeseed oil, and added 1/4 tsp of almond extract. I also used natural cocoa, rather than Dutch-processed, for the chocolatiest flavour. It is great! DH loves it!
OMG this is awesome!! I tried something similar previously but it didn’t have the peanut butter mixed in. That makes a huge difference!! Also, I used hot chocolate rather than plain cocoa. I like it much better. Next time I’ll stir in some chocolate chips too. ;)

Just made this and it was awesome! Such a great epiphany on the effect of the egg. I subbed almond milk for dairy milk and it turned out great.
WOW-I have never been a fan of mug cakes. But everything about this recipe appealed to me, and I loved it! Excellent! I had to make a few changes since I was out of milk-used rice milk, sugar-used brown sugar…topped with a lil chocolate syrup and yum. Will definitely eat this again, and again!
The flavors are still swirling around on my mouth and settling into my tummy as I type. Wow! That was wayyyy too good! And way too easy too. Vewy vewy dangerous! I did remove a “little” of the guilt by subbing a few things. Used whole wheat flour, honey, coconut oil, and almond milk. Also added 1/4 tsp vanilla, just for good luck. It was sinfully delicious! I need to delete this recipe and never see it again (yea, right)! ;)

I found this recipe and it looked super yummy, so I decided to give it a try. I don’t know what happened but this didn’t work out for me! I put the mix in a mug and into the microwave for 1:10. I took it out and it looked the same as when i put it in :( it was raw! It bubbled a lot and eventually settled down. I even heated it longer and it just didn’t turn out right. Any idea of what went wrong?
My best guess would be that your baking powder is not good anymore! Hope you get to try it again! :)
First attempt at a mug cake ever, and I was pleasantly surprised at how it turned out! Very tasty, and not too messy, but this may be because I used a bigger mug and watered-down sour cream since we just ran out of milk yesterday. I’m sneaking one into roomie’s lunchbox for tomorrow, so you’ll have another fan soon. Thanks for doing the trials so us lazy folks can get straight to the goods!
I also just made this mug cake, and unlike Paula (above) it turned out really well. However, I think the original recipe should explicitly tell people to mix the wet ingredients in a separate bowl or mug before adding them to the flour mixture. That way you can use a fork “liquify” the peanut butter, or at least break it down until you have little chunks of peanut butter suspended in oil and milk. Then when you combine the wet and dry ingredients, the flour is beaten for as little time as possible…which means a more tender cake! It was moist and chocolatly with just the right amount of peanut butter. More importantly, the portion size was perfect!
I just made this cake. I was very disappointed! It came out dry and did not taste very chocolates at all. It wasn’t that it had too much peanut butter, because it lacked peanut flavor as well! Overall, it was a rather large let down. Does anyone know of a better, fool-proof recipe for a microwave mug cake?

wonderful! I used coconut oil because I thought it would be a nice touch and it was. Just a note in the background but good. The texture was perfect…moist, light and fluffy all at once, Just like cake should be. Also I tossed a few chocolate chips on top before cooking and didn’t mix in, most stayed on top and it was kind of like a fudge type topping. This is a keeper, Thank you so much for sharing!
I have an idea I hope would be helpful to anyone who doesn’t have a microwave but wants to try this delicious recipe……..make up 2 mugs and take both over to a neighbor who does and 70 seconds later one of you will be diving into this delight while the 2nd person awaits their 70 seconds to be complete! Make sure you bring a copy of the recipe for your neighbor…..they will most certainly want that.
Thanks for a fast easy and fun treat! Made these 5 times now and always turn out great! Love the soft fluffy warm texture :-) On my latest one I sprinkled a shy quarter cup of chocolate chips on top the warm cake…the chips softened into a perfect frosting.

Sorry Anne, but the recipe was specifically made for the microwave. You are more than welcome to try it in the oven, but I have no idea how it would come out.
That was delicious and worked perfectly. I made it with chunky peanut butter so I would feel like it had some kind of chips in it. Yum. Do you know of any good plain chocolate mug cake recipes? My daughter doesn’t like nuts or nut butters and she wants to try a mug cake soon.
How does she feel about Nutella? If you added Nutella instead of peanut butter, it would just be a lot more chocolatey!
You could also probably leave out a butter completely, it just might be a little more dry. If it is, add in a splash more oil!

I made a few adjustments: rice milk and powdered honey instead of sugar. I also added PB chips. My result was okay. Next time I think I’ll stick with sugar and add chocolate chips instead.
This was, hands down, the BEST mug cake I have ever made. It was so soft and peanut buttery! Lol The only change I made was that I used chocolate syrup instead of powder(because I was out.) And it may have made it a bit gooier than with powder,but it was still delicious! Other mug cakes end up tasting like a flavored sponge–but not this one! I think I have found a new blog to follow because if your other recipes are HALF as good as this one then I will not be dissappointed!

I just made this mug cake for both my boyfriend and I and it is amazing! I am actually a dietetic intern right now and I think that this is a great idea for people who would like a treat once in a while, but cannot have a whole cake in the house(or they eat the whole thing!).

Some modifications people could try:
Natural peanut butter instead of the “normal” stuff
Honey in place of some of the sugar
Applesauce or baby food prunes in place of some of the oil
Vanilla!
Cinnamon?
Whipped cream or icing or vanilla Greek frozen yogurt on top

I just made this for breakfast and it was so good! The only mug cake I’ve tried that had a real cake texture. Although the flavor was too peanut buttery, I almost couldn’t taste the chocolate. Do you think the peanut butter could be replaced with something else?
Sure! You can replace it with something like Nutella for a more chocolate flavor or one of the cookie spreads like Biscoff!

So now, I have modified it a bit – I double the quantity of everything, sans peanut butter and microwave it for exactly 5 minutes on high – turns out to be this perfect moist spongy soft cocoa cake that doesn’t deflate and lasts for about 2 tea times… I can’t thank you enough for this, my husband and I love it!!
SOOOO I had a HUGE chocolate craving 15 minutes ago while I was going through my Google Reader and your post came up and I literally grabbed my phone and went into the kitchen and made this. I ate it so fast. I’ve never had a mug cake in my entire life and you have made me a believer. I don’t think I’ll ever add the egg in because I don’t like spongy textured cakes all too much. ANYWAY, long story short – you are amazing, I love you, and thank you for filling my chocolate craving. That was seriously the best thing I ate this week. I’m hooked. I probably will be making way more of these and adapting them with flavors haha :) xoxo
YAYYY!! It’s always SO nice to hear that someone else liked it too. Were you all kinds of nervous when the cake like almost blew up and then shrank back down? Cause the first two times I was convinced it was going to explode in my microwave… ;-) haha

Also, for the first time ever, I’m tempted to try making a mug cake. I’ve only ever heard bad news about them, like they’re one of those fake, weird desserts people make just for the sake of having something chocolaty. It never seemed worth it to me. But this actually looks GOOD! Pinned!
SO TRUE! I can just get that banana crazed husband to eat the other half…but since he travels 50% of that time, I somehow always crave mug cake when he’s not home!
Try using a dinner fork to stir it up and be sure to scrape the sides of the mug . for the left over banana half. Cover with the peel. Put in baggie and freeze. For a fast snack slice frozen banana on a small plate. Pour Magic Shell chocolate (or any other dessert syrup or topping ) over and enjoy “banana ice cream” . melted jam (10 seconds in microwave) is great as is Nutella. ) so is any other fruit blended into a sauce, especially frozen strawberries…

who would have thought that one egg could make such a difference! I’ve actually never had a mug cake but I think I’m going to have to start making them after seeing this!
I have to admit that I’ve never made mug cakes, I’m just not crazy about making anything in the microwave since I only use it for heating up stuff. Question though, how essential is the peanut butter? I’m not too crazy about it (gasp!), so it would be something I would like to skip. Thoughts?
You could sub in something like Nutella or a cookie butter like Biscoff! :)

I have never commented on a blog before, but I had to say this is the best mug cake I have made! And yes, I made it for breakfast and it was delicious! Thanks for FINALLY giving me a way to have a yummy cake in less than five minutes!

I love that you stuck with the mugcake trials b/c I agree, they can be realllllllly hard to get right. Either raw, dried-and-fried, gloppy, gummy, or all of the above in one item! No egg, just banana. Reminds me of my vegan cooking days when I used to make all my muffins in the oven without eggs and just bananas. Need to try this!
Knowing how to make this is going to be very dangerous. If my pants don’t fit in a couple weeks you are going to be directly to blame :)
Sadly enough, I don’t have a microwave! But I have a good friend that does and LOVES mug cakes–I’ll be sure to pass this along!
