I just found out today that Jorge is probably headed to NYC for 3 weeks. I am insanely jealous!
Yes, I get to visit him for a long weekend. And yes, we are taking a trip to NYC in December again with some friends…but he will get to live there for 3 straight weeks!
That’s like my dream! I don’t think I could be a full time BIG city girl, but I would be a really good part-timer.
I imagine Jorge will be eating at all the grandest places, strolling through Central Park (in Autumn people – my favorite season!!) and of course just living life like a real new yorker.
I’m even jealous that he is probably going to be riding the subway or cabbing it into an office every day. I obviously have a real fever for NYC.
To make my green jealousy eyes burn a little less brightly, I figured I would make something that could give me a little bit of Fall and NYC down here in Florida.
So for starters, I new I wanted to use a big red apple. I thought about making regular caramel apples…but then I got an idea for Caramel Apple Chocolate Bark.
It combines all of my favorites: crisp apples, dark chocolate & chewy caramel!!
Caramel Apple Chocolate Bark
Ingredients
- 1 large red apple
- 1 tablespoon Dixie Crystals Extra Fine Granulated Sugar
- 8 ounces dark chocolate
- 12 caramel squares, unwrapped
- milk, optional
Instructions
Baked Apples
- Preheat oven to 200°F. Line an 11×7-inch baking sheet with parchment paper; set aside.
- Thinly slice apple using a very sharp knife or a mandolin. Place apple slices in a single layer on prepared baking sheet. Sprinkle with sugar.
- Bake for two hours, flipping apples halfway through baking. Turn off oven and let apples cool completely. Crush apple chips into large pieces; set aside.
Bark
- Line an 11×7-inch baking sheet with parchment paper; set aside.
- In a medium microwave-safe bowl, microwave chocolate for 45 seconds and stir. If not completely melted, microwave in 15-second intervals, stirring after each interval, until smooth.
- Pour chocolate onto prepared baking sheet and spread into a rectangle. Top with apple chips. Set aside.
- In a small microwave-safe bowl, microwave caramels for 30 seconds and stir. If not completely melted, microwave in 10-second intervals, stirring after each interval, until smooth. (Some caramels may need a little milk added to soften caramels into a drizzle stage. If needed, add one teaspoon of milk and stir until smooth.) Drizzle caramel on top of bark.
- Chill bark in refrigerator for 30 minutes, or until hardened. Break into large pieces and serve.
