Butternut Squash, Apple & Sage Soup
I caught a cold on the plane back from Vegas and it took me out for a few days and seemed to eventually mostly go away. Fast forward three weeks and now I have pneumonia. Go me.
I’m all loaded up on antibiotics, steroids, cough syrup and inhalers, but I am convinced the only thing making me feel better is soup. I have had potato & leek soup and then a delicious corn chowder my lovely neighbor made me.
Both of those soups were full of delicious heavy cream and I wanted to make a soup I felt a little less guilty eating. All the steroids I am being pumped with are already going to make me puff up, lord knows I don’t need help in the form of heavy cream.
This soup is secretly healthy, because I promise that it doesn’t taste healthy! It’s naturally sweet from the butternut squash and the apples and has gorgeous spiced flavor from fresh sage, cumin, cinnamon, smoked paprika and a little cayenne pepper.
