Lemon Lava Cake
THE HOLIDAYS ARE OVER! It’s been a long stretch since the holidays started way back with Halloween, but here we are post holiday season and I miss it already. That’s ok thought, it has made room for Summer things like grilling and this fruity Lemon Lava Cake!
Now it’s time for Summer (Spring already happened here in Florida — it lasts about 2 weeks down here this close to the equator) and I am already preparing myself. Sure, we celebrate 4th of July, but the big fun holidays won’t roll around again until October. I always miss the house being decorated for each holiday — but I am getting ready to bring everything red, white and blue out!
I have been craving molten lava cake for a while now and I have made a few chocolate versions when it was colder. However, since it is already hot here in Florida (high 80’s lately), I wanted something a little lighter than the traditional chocolate.
I was a little nervous on how this would turn out…I am so used to lava cakes only being served as chocolate flavored, but these Lemon Lava Cakes were seriously divine. I ate two in a matter of minutes — no joke. I even have the tongue burn to prove it.
I ended up loving these so much, that I have already made them three more times! They are just so bright and citrusy. Just like the chocolate ones – they are made with melted butter and white chocolate so it has the same classic texture we all love.
If you like Lemon Soufflé, you will love these Lemon Lava Cakes. It’s the same idea, but molten in the middle…and you don’t have to whip your egg whites. Win-win!
