These Jalapeño Popper Stuffed Chicken Roll-Ups Are Great As Appetizers Or A Meal

I am a huge fan of “man food”. Beef Jerky. Steak. Giant loaded baked potatoes. Meatball Bombs. Nachos. Beer. BACON. It’s all good to me.

So when these Bacon Wrapped Jalapeño Popper Stuffed Chicken Roll-Ups came out of the oven I couldn’t stop myself from immediately eating two right away. Sure I burnt the roof of my mouth…but it was entirely worth it.

I consider these to be true “man food”. They would complete any tailgating party as a filling appetizer or you can eat two and turn it into an easy meal with some loaded mashed taters on the side.

These Bacon Wrapped Jalapeño Popper Stuffed Chicken Roll-Ups are super simple to make. You start with thinly pounded out chicken. Then wrap it around a breaded Farm Rich Jalapeño Pepper already stuffed with real cream cheese…and finish it off with a layer of bacon. Then they are baked in the oven into crispy full flavor perfection.

Can These Chicken Roll-Ups Be Make Ahead Of Time?

Bacon Wrapped Jalapeño Popper Stuffed Chicken Roll-Ups are filled with my favorite flavors. Each bite is loaded with crispy bacon, tender chicken, spicy jalapeño and smooth cream cheese.

I can imagine these as a great filling appetizer, snack or have two as an entree. We had these as a snack in the afternoon and they were so filling I wasn’t even hungry for dinner!

If you do want to bring these to a party, you can prep them up to a day before and just keep them in an airtight container in the fridge until you are ready to bake them for the party. Hope you enjoy!

Jalapeno Popper Stuffed Chicken Roll-Ups Recipe

Bacon Wrapped Jalapeño Popper Stuffed Chicken Roll-Ups are great as an appetizer, snack or even a meal! They are so easy to make using store bought Jalapeño Poppers and can even be prepped ahead of time.

Ingredients

  • 4 thinly sliced chicken breasts
  • salt and pepper, to taste
  • 8 Farm Rich Jalapeño Peppers
  • 8 slices bacon

Instructions

Preheat oven to 375°F. Grease a small casserole dish with non-stick spray, set aside.

Place chicken breasts in a flat layer on a sheet of parchment paper. Place a second sheet of parchment paper on top. Using a mallet or a rolling pin, gently pound chicken till about 1/2 inch thick.

Season chicken lightly with salt and pepper (keep in mind the bacon will also add salt to the final flavor). Each pounded out chicken breast should be long enough to make two roll ups, so slice them in half.

Wrap chicken around a Farm Rich Jalapeño Pepper. Then wrap with bacon. Place in prepared casserole dish and continue working until all chicken, poppers and bacon are used.

Bake for 35 to 40 minutes, until bacon is crispy and chicken is cooked through. Serve hot!
