I have a love for EVERYTHING Buffalo flavored, but I can’t eat buffalo wings. We have talked about it before, but I just seriously can not eat meat off a bone. This is the main reason I know I could never go on to judge something like Top Chef. Sure, I can touch bones, clean meat off of them and do anything like that. But ask me to eat a drumstick? A rib? Or worse yet, bone marrow?! ::shudder:: Tom Colicchio would laugh me right off set and Padma would give me her pity face.
But my bone phobia hasn’t kept me away from my love of Buffalo Wing Sauce! For starters, just about everywhere offers boneless wings these days. Hot boneless buffalo wings, blue cheese dip and a super cold beer? That is my JAM. As you know, my love of buffalo has corrupt other normal things like enchiladas and salads too. I just can’t stop my obsession for that sinus clearing burn. 😉
A few months ago, I stopped in at The Fresh Market to get some obscure product that no regular grocery store carries in my area (Grey Sea Salt…but I also bought a wedge of Humboldt Fog while I was there and ate it for dinner with a bottle of wine — I would do so well in France). While there, I saw a wrap filled with Buffalo Chicken Salad in their prepared foods section. Of course, I had to buy it and it was just funky enough for me to fall in love.
So last week, I found myself with a Rotisserie Chicken and a carton of Voskos Greek Yogurt. I love using fat free plain greek yogurt in place of mayo in chicken salads (like in my favorite Michigan Cherry Chicken Salad). I also had a half used bottle of my favorite Frank’s Red Hot Wings Buffalo Sauce tucked away waiting for the perfect recipe. Plus, Jorge — the blue cheese hater — was out of town! It was like fate! I was destined to make this Buffalo Chicken Salad. I was really happy surprised with the final product. While I would usually do half Voskos Greek Yogurt and half mayo in chicken salads, the addition of crumbled blue cheese added plenty of creaminess all on it’s own.
- 1/2 cup non-fat plain Voskos Greek Yogurt
- 1/2 cup Franks Red Hot Wings Buffalo sauce
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fresh ground black pepper
- 4 cups of cooked shredded chicken
- 2 celery stalks, chopped
- 1/2 cup cilantro, minced
- 1/2 cup crumbled blue cheese
- In a large bowl, whisk together Voskos Greek Yogurt, buffalo sauce, salt, garlic powder and black pepper.
- Fold in chicken, celery, cilantro and blue cheese.
- Serve on crackers, in a wrap, or as a sandwich!
recipe note: this makes for a medium heat buffalo flavor. If you like it even spicier, just add in a little more buffalo wing sauce!
