Cinnamon Apple Buckle!

We are heading out on vacation on Friday and I always forget how stressful it is to actually go on vacation.

Once you get there, it’s great, but getting there…ugh.

I have about 16 lists running through my head trying to remember what to grab and what not to forget.

Packing for yourself is one thing, but packing for a family of four is a whole other thing.

I might just bring our swimsuits and smiles to the beach. Ha!

On top of that, I also have to get a week worth of work done before I leave and get the dogs and cats all scheduled to be taken care of.

You know, normal stuff, but it all adds up.

I decided last minute that I wanted to get a new swimsuit this year…which is a terrible idea under normal circumstances.

But even worse when you just stuffed your face with an Apple Cinnamon Buckle.

If you have never made a buckle, it’s a layer of cake, fruit on top or stirred in, and then a crumb topping.

It’s delicious and one of my favorites to serve as a coffee cake!

This buckle starts with an easy one bowl moist vanilla cake.

It’s topped with apple pie filling and an oatmeal crumb topping. It’s SO dangerously good!
