Did you ever think I would be begging for the newborn phase to return?

I mean, I thought I would when they were like 16 and driving. Or 18 and leaving to begin their own lives without me.

I didn’t think I would be wishing for those round the clock every 3 hour feedings at only 5 months old.

However, I am. Teething is the absolute worst. Especially when you have two times the teeth.

At least when the girls were newborns, I could count on them.

They would wake up to eat, be up for an hour max and then sleep for two. Jorge and I slept so much during the first month!

Teething has turned my babies into monsters. Adorable, drooling, screeching monsters. T

hey won’t sleep longer than 30 minutes during the day. And it’s an almost guarantee that one (or both) is going to wake up throughout the night because their teeth are bothering them.

I can’t sleep during the day. I can’t sleep at night. I’m practically a zombie.

So since I can’t even tell you what day it is (and I am up at the crack of dawn with plenty of time to start dinner), I have been making a lot of crock pot dinners. And this one is definitely one of my new favorites!

Usually I am not crazy about how a lot of Asian dishes come out in the crockpot. Honestly, I think it is because most of my favorite Asian foods are fried and nothing in a crockpot is fried.

Thankfully Bourbon Chicken is never expected to be fried, just delicious.

Crockpot Bourbon Chicken

This Bourbon Chicken is not only delicious, it is also inexpensive to make since it utilizes a lot of pantry staples! Serve over rice and broccoli for a filling dinner the whole family will love.

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • ½ cup apple juice
  • ¼ cup soy sauce
  • ¼ cup Dixie Crystals Light Brown Sugar
  • ¼ cup ketchup
  • 3 tablespoons bourbon
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 5 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • ½ to 1 teaspoon red chili flakes, to taste
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Green onion, for garnish

Instructions 

  • In a medium bowl, whisk together apple juice, soy sauce, light brown sugar, ketchup, bourbon, honey, apple cider vinegar, garlic, ginger and red chili flakes. Add chicken and toss in sauce.
  • Pour into a greased 7-qt crockpot and cook on high for 3 to 4 hours (depending on your slow cooker) or on low for 7 to 8 hours.
  • Once cooked, remove chicken from sauce and roughly chop. Set aside. Whisk together cornstarch and water until smooth. Set aside.
  • Transfer sauce to a large sauté pan over medium-high heat. Add cornstarch mixture and bring to a simmer. Continue simmering and stirring until thickened, about 5 minutes. Stir in chopped chicken. Garnish with green onion and serve over rice and broccoli.

    oh how I envy your newborn phase sleep! My little girl is 11 weeks old and I have yet to be able to put her down for a nap. She’ll wake up and cry and can’t be comforted until she’s back in my arms. I try all I can but she’ll go until the next feeding without sleep if I don’t give in and hold her. Unfortunately “sleep when the baby sleeps” has been a fantasy for me so far. Hopefully change is on the horizon, and when it comes, I’ll have time to make this amazing looking chicken. :)

    You poor thing! Teething is awful! But, yes, frozen waffles help (plus, hey, breakfast, sort of, lol). Also, unopened Otter-Pops. (The popsicle type things in the long plastic tubes.) Just hand them an opened one, let them chew on it for a while, then (if they haven’t punctured it) put them back in the freezer for next time! Good luck!! :)

    You should try hylands teething tablets. They are absolutely AMAZING! Completely homeopathic and won’t numb their gag reflex like some of the other products.

    Girl, I cannot even imagine. Can. Not. I SO wish I was close by and could come watch those babies for an afternoon so you could take a long nap. Everyone in the world will give you teething advice, but at the end of the day there is no real cure. Stuff that may mildly soothe them temporarily, sure…but no real relief for you :( But usually we get a break right when I’m about to lose my mind…hoping that happens soon for you, too!

    I’ve heard that using storebought frozen waffles helps with teething babies.. I assume they are chopped into sticks??
