I will be the first to admit it — I am obsessed with rainbow buttercream sprinkles.
So are these Funfetti Cookies with Pink Cake Batter Frosting really that big of a surprise?
I could eat cake batter flavored things for the rest of my life and be so happy.
I made these extra big cookies with two big tablespoons of dough because I wanted them to look like Mini Cookie Cakes.
I always wanted one of those big cookie cakes you see at the mall, but I know I could never eat that much cookie.
You are probably thinking — well duh, Jess. You are supposed to share the cookie cake, it’s not a single serving.
And sure, you’re right…but if it’s my birthday, I want to eat the whole cake myself.
So I made mini cookie cakes that I could easily eat one (…or two) of by myself.
And I made them filled with my favorite rainbow sprinkles. They have no brown in them — those are my least favorite — and they come in a massive bag.
Funny sprinkle story — when I was pregnant, after every OB appointment, I would go get a DQ Cone with sprinkles.
And then I would request EXTRA sprinkles on the side. And one time they forgot my extra sprinkles and I cried.
Y’all, I am not a cryer. It was highly embarrassing, but that is how much I love sprinkles.
