One of us is the Mad Hatter and one of us is the March Hare…but either way, it is both of our unbirthdays and we are both getting a Le Creuset Tagine!
One of you will soon be cooking Moroccan food with your very own Tagine! How excited are you?!
Or do you actually have no effin’ idea what a Tagine is?
I realize that a Tagine may be a foreign concept to some since it is rarely seen around the US, but I promise every kitchen needs one. A Tagine is a shallow, round, pot with a cone shaped top designed to lock in moisture by circulating steam while cooking.
A traditional Tagine is earthenware which tend to have problems with cracking when placed on a flame or stovetop. The Le Creuset version actually has a beautiful cast iron bottom and stone top to ensure a lifetime of usage. The word Tagine is used for the pot as well as the actual dish. The same way we refer to anything served in a casserole dish as “casserole” (ex: “Please pass me the casserole”).
I fell in love with Tagines 2 years ago. My girlfriend took me to an amazing Moroccan restaurant where I was served my first chicken tagine. It was the most delicious chicken I had ever had. This particular Tagine had large chunks of dark meat, that was perfectly tender and juicy. It was accompanied by prunes, apricots, nuts and a large helping of buttery couscous. One bite and I instantly knew that I had to own my very own Tagine. Like yesterday.
So when Le Creuset said they would like to do a giveaway and a review of one of their products, I prayed and wished on stars and even did a rain tagine dance in hopes that they would say ok to a Tagine giveaway instead of the classic Dutch Oven.
While I absolutely LOVE their Dutch Ovens (because seriously, who doesn’t?), I really wanted to get my hands on one of these babies. Somehow the stars all aligned and this beautiful red Tagine arrived on my door a week later.
I bought a cookbook that only has recipes for a Tagine and once it arrived I just about exploded from desire. I had a beautiful new Tagine, a cookbook full of recipes, and a whole week to figure out the perfect recipe to share with all of you.
I finally decided on a Chicken Tagine with Preserved Lemon, Green Olives, & Oregano. I was really intrigued by the combination of flavors and the preserved lemons. The chicken was so incredibly moist that I honestly did not have to use a knife to cut the chicken.
The flavor from the marinade was absolutely phenomenal and I swear I saw Jorge licking his plate. I ended up having a difficult time finding preserved lemons, but I am so glad I went through the extra trouble of finding them. Wow, they really added a whole level of flavor to this recipe!
They are not half as sour as a regular lemon and are incredibly soft (you eat the rind and all). I ended up finding them at World Market for $3.99 for 2 preserved lemons. I did find a recipe, in the new cookbook, on how to preserve lemons yourself (it takes a month) and will be blogging about that soon!
Chicken Tagine with Preserved Lemon, Green Olives, & Oregano
Recipe Note: You can easily substitute the chicken thighs/legs for 4 chicken breasts.

Ingredients:
- 8-10 chicken thighs or 4 whole legs
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 preserved lemons, cut into strips
- 6 oz cracked green olives
- 1-2 teaspoons dried oregano
for the marinade:
- 1 large onion, grated
- 3 large garlic cloves, minced
- 1 teaspoonful peeled & grated fresh ginger
- 1 small bunch of cilantro, finely chopped
- a pinch of saffron threads
- juice of 1 lemon
- 1 teaspoon coarse sea salt
- 4 tablespoons olive oil
- freshly ground black pepper, to taste
Directions:
- In a large ziplock bag, mix together all ingredients for the marinade. Add chicken and shake/massage bag to massage marinade into skin. Place in refrigerator for 8 hours or overnight.
- Heat the olive oil with butter in a tagine over medium high heat. Remove the chicken pieces from the marinade and brown them each side.
- Pour over the marinade that is left in the ziplock bag and add enough hot water to cover halfway up the sides of the chicken.
- Bring the water to a boil, reduce heat to a medium-low, cover with lid, and simmer for about 45 minutes, turning chicken from time to time.
- Add the preserved lemon, olives, and half the oregano to the tagine. Cover again and simmer for further 15-20 minutes.
- Check the seasoning and sprinkle the rest of the oregano over the top if you choose. Also adjust any salt/pepper issues. Serve immediately from the tagine with buttery couscous.

My first experience with Moroccan food was the first time I ever celebrated my (now) brother-in-law’s birthday. It has been a family tradition of theirs to always go out to Morroccan food for his birthday since they’re one of the few restaurants open on December 24th. I fell in love with it that first night and make it whenever I can, although I’ve never quite been ambitious enough to try to replicate the full meal we have for his birthday.
I love Tagines! My first Moroccan food experience was at my husband’s best friend’s house. He invited us all over and made us the most amazing lamb tagine. We have been addicted ever since! So I’ve been trying as best as I can to make it without a tagine but this giveaway would definitely save the day!!
My most memorable experience with Moroccan food got o be when I prepared Moroccan rice pudding at my home,luved the flavor of rice cooked in almond milk and garnished with sliver of blanched almond 🙂 slurp feel like preparing it again,chicken tagine looks delicious 🙂

I haven’t had too much experience with Moroccan food, but the first time I has falafel, it pretty much changed my life. I’ve been looking for new ways to prepare chicken, so this looks amazing! Anything by Le Creuset is always pretty amazing.

My father was in the Air Force & at one point stationed in Morroco. He described the food as spicy, French inspired. We never got the chance to travel to Morroco, but he did bring home spices for my mother to try. She proceeded to attempt several dishes which were decent, but my father said she never captured the flavors he remembered.

A good friend of mine is Moroccan and I’ve been lucky enough to have a couple dishes that he has made in his Tangine that he brought from home when he moved to the US. The food is some of the best I’ve ever had!

The first Moroccan meal I cooked was simply Moroccan chicken pitas- easy but yummy!
I first tried Moroccan food with some foodie friends in our area. The quaint little restaurant offered tapas-style plates, and we shared so much amazing food that we can’t wait to go back!

My favourite part of any country’s cuisine is the dessert! When it comes to Morroccan food, halwa shebakia (deep fried dough coverd in honey and sesame seeds!) is where it’s at! It was love at first bite! :o)

My most memorable experience with Moroccan food was when my mother’s friend invited us over for dinner. It was Ramadan so we had been fasting all day.. and boy did that food look amazing on the dinner table. We had harira, which is Moroccan soup, and we also had a variation of chicken tagine. I’m pretty sure you can’t go over a Moroccan’s house without having chicken tagine…it’s a classic! Algerians, like me, make it all the time as well 🙂

Earlier this year in Feb my husband and I went to a winter farmer’s market then walked around town and ended up having lunch at a Moroccan restaurant. He had a dish very similar to what you posted here, expect it included lamb and potatoes. I tried making a tagine, but it was nowhere near the one he had. He’s been asking me to recreate “the dish”, so I need to try this recipe to see how close it comes!

About 11 years ago, when my baby sister was 6 or 7, I took her to Casablanca (our local Moroccan restaurant) for dinner. It’s an 8 course meal. My parents (for whom exotic is ordering Chinese take-out) thought I was crazy taking a kindergartner to a “place like that”. They were certain that she wouldn’t touch a thing. So, I promised her that if we went she had to try everything (just a bite) and if she didn’t like it she’d get a Happy Meal after.
So, we get there and her eyes got huge. The restaurant is like being in a jewelry box. Low tables, belly dancers, huge baskets of pita bread being passed around. Rose water is poured over your hands at the beginning of the meal. We snuggled into a tiny booth together (most fit about 20 people, this barely fit us) and her eyes got bigger and bigger as each course arrived. She ate everything! Even the super spicy chicken (mmm…harissa!) and the b’stilla (chicken and powdered sugar . . .OK!). She especially loved eating with her hands. I’ve never seen a kid eat like that! It is one of the absolute best memories of me and my little sis.
The first time I had moroccan food was at Disney in Epcot! The food was amazing and I would love to experiment in the kitchen with some tagine cooking! Plus I would just DIE to have my first Le Cruset!

My favorite recipe for a tagine hails from Nigella Lawson. Her Lamb Tagine with rice and pomegranate seeds is to die for and it’s incredibly moist and delicious. I’ve made it twice, once for summer, and once around Thanksgiving, and have been eyeing the Red Tagine from Le Creuset for a while.

I absolutely love Moroccan food! My most memorable experience with it is cooking it for the first time for my daughter, who was about 14 months at the time. I made a chickpea, tomato, & chicken dish, rich in spices with vanilla, cumin, coriander. I didn’t know how she would react, but she finished her first serving and then ate a second, grinning the entire time. At that point I realized I had a little budding food lover on my hands (hooray!)

I love morrocan food. We often have chicken with prunes and other vegetables in the winter. The warm flavours warm you up and it tastes so good. This is an exciting give away because my birthday is this week, who wouldn’t love a tagine???
As a longtime vegetarian, I “discovered” chickpea-vegetable stews over couscous many years ago. One of my favorite Moroccan dishes, though, is a vegetarian shakshuka (eggs poached in tomato sauce), which is like the Italian uova al purgatorio. Thanks for the giveaway!

I fell in love with Moroccan food many years ago when someone gave me a copy “Couscous and Other Good Foods from Morocco” by Paul Wolfert. Since then, her 7-Vegetable Couscous has been a staple at all family special events, in fact, it was the first thing my daughter requested for her wedding. However, I have never attempted making a tagine as I could not afford or find a real tagine pan where I lived. I would really like to master that part of Moroccan cooking.

I have never made Moroccan food but I love to eat it at restaurants and have great memories doing so since early childhood. My favorite would be when i was a little kid and the sitting on floor cushions eating couscous with yummy meat.
We had this amazing Moroccan feast in San Jose at Morocco’s Restuarant. We had an endless 7 course dinner selection…meaning if we ran out of something, we could ask for more of it. – We had Crab briwatts,Nut & cheese sampler, beef tagine, Beef couscous, Chocolate-filled briwatts, so much more…and plenty of Sangria. It was just the best experience with a group of friends…that we still talk about it to this day.
Unfortunately, I have not made Moroccan food, but have always wanted to try, and this would be great motivation to try it out!

For my 22nd birthday a bunch of my friends and I went to a Moroccan restaurant – even though I had never tried it before. At first I was completely weirded out by the flavor combos listed in the menu – cinnamon and chicken? What? But I ended up loving everything I tried!

My first experience was when I was a freshman in college. We stopped at a Moroccan restaurant outside Lansing after playing MSU in a three game series. One of our coaches loved the restaurant and it was pretty much a tradition from what I gathered from the other players. Unfortunately, we never went back since they changed coaching staffs at the end of the season.
I don’t have any Moroccan food experience but always loved the look of the tangine! Would definitely try your above recipe with it!

I had a great dinner cooked by my friend’s Moroccan boyfriend the first time I was meeting him (I was the roommate) up in San Francisco a couple years ago. I dont know what the dishes were called but they were amazing and home cooked. Made ME fall in love with the moroccan boyfriend, :-). Unfortunately now living in LA I have not had it again and have yet to find a moroccan restaurant in my area to try it again. Would really love to learn to cook some of the dishes and use the Tagine!

I was backpacking in Europe when I decided to treat myself to a meal in a real restaurant in Valencia. I stumbled on a Morrocan restaurant and got the surprisingly affordable set (chef’s choice) menu. Even though every dish was a surprise, they were all delicious. . .
There’s a couple great Moroccan restaurants in Philadelphia. My best friend introduced me and from that first bite, I was hooked. I’d love to win my very own tagine. 🙂

I close my eyes & I’m transported back to the market in Marrakesh where the scent of coffee & tea floats at nose height and tagines are sold in market stalls for a pittance so low you wish you’d left room in the suitcase…
Oh, how my heart has ached for one of these for the longest time! A few years back my boyfriend at the time invited me to a wedding where a multitude of food from different areas was served. I’m generally partial to Vietnamese, Indian, and Thai food but when the family rolled out their beautiful, traditional tagines full of a hot chicken, chickpea, and mint mixture, I forgot about the other cuisines there and pretty much gorged myself exclusively on that one dish. I couldn’t help myself! The presentation and the taste were too much for a simpleton such as myself to resist… Although my boyfriend and I broke up a while ago, I still think fondly about that experience. I would love to have something so nice to cook traditional not-mid-west dishes with while being a poor college student. I’m drooling right now thinking of the possibilities. The great thing about this item is that it’ll totally be usable for the rest of the life of whoever wins it! How exciting!
I’ve never actually had an experience with Moroccan food – but I sure would like too! I’ve seen several cheaper tangines at World Market and such – but giving my “tangine V-card” to a LeCruset Tangine would sure be somethin’! (Wow, I just used used V-card in sentence about cooking…this just got weird.)

I have to admit that I have only had Moroccan food once. We went mostly for the ambiance of the restaurant. I do remember it be heavily spiced. I would love to try this though. I love to cook and this would inspire me to try new recipes at home!!!

My most memorable Moroccan ‘meal’ was spiced chickpeas! I know, I know… not a meal but an amazing side dish that even now makes my cheeks start to salivate! Salty and herby and spicy but not so much your eyes watered. I want it now!

I have never cooked Moroccan food; however I do love the taste and the contrast of sweet and savory flavors. Your chicken looks delicious; I will definitely have to try this recipe.
Well, I have never had Moroccan food, but I did watch the Real Housewives of New York while they got private cooking lessons in Morocco. They used tagines and the recipe seemed simple and delicious. I hope I win so I can start my moroccan food experience…one cannot live on salsa verde chicken enchiladas alone!

I can see why you did you tagine dance and I’m so glad that the stars aligned for you because you sincerely deserve that beautiful tagine, especially after seeing what you can do with it! I’ve only had one experience with Moroccan food in my life; a friend, who grew up in Morocco, made a stew that was served with couscous. It was delicious.
Preserved lemons were kind of a revelation to me!

I first tried Morrocan food when I lived in the south of Spain, which is close to Morocco geographically. It was delicious, so full of flavor and cooked with love. I’ve never used a tangine but have always wanted to — I hope I get the opportunity to try some day!
My best memories are of my mom experimenting with various Moroccan recipes and spices. She made THE best food: couscous, lamb, stews, desserts etc. I loved that our heritage is center European, and yet she always strove to incorporate other cultures and foods. We grew up eating predominately healthy, ethnic foods. Love Moroccan!
This is definitely one of those dishes that I would love to have but couldn’t justify buying for myself. I definitely plan to attempt this dish, though =)
I don’t own a tagine but one of my good friends owns one and uses it all the time. She makes many absolutely delicious dishes with it. I would love to own one so I can try cooking some tasty Moroccan foods!

I don’t know that I specifically remember my first Moroccan food experience, but I know I’ve been interested in Moroccan food after seeing “The Man Who Knew Too Much” (Hitchcock film). And I love the Moroccan hummus at a local grocery chain!

First time I had Moroccan? Hmmm…..My mother use to host themed dinner parties…I remember her having friends over and sneaking into the kitchen to try the food (we always got something else). This made me realize that I don’t think Jason has ever eaten Moroccan….I NEED to win this…so I can make him some yummy food.

I had to google Moroccan cuisine to see if I’d ever even eaten it. How sad that I can really only name ingredients I’ve used and not true Moroccan dishes! And I just bought some orange flower water, which apparently is used in Moroccan desserts, so now I have no excuse not to try a Moroccan recipe.

I’ve never had an authentic Moroccan meal, but I did have a chicken w/ chickpeas, tomatoes, and lemon from a W-S recipe that was delicious. A tagine is something I’d love to have, but an LC one- well, I don’t think we could convince my husband that I “need” to buy one right now, so winning one would be amazing! 🙂
We have an amazing Moroccan restaurant in Austin. I couldn’t get enough of it. I kept going and going. I think I made my friends tired of it even.
been to Morocco, enjoyed the food. However, I will enjoy the awesome food that will be produced from the new tagine by my wonderful cook/wife 🙂

Thanks for another magnificent post. Where else may anyone get that type of information in such an ideal method of writing? I have a presentation next week, and I am on the search for such info.
While shopping at the Le Creuset outlet with my daughter, we learned about the tagine and its history. She has had Moroccan food in San Fran and loved it. We both bought a tagine cookbook there and I would love to try out the recipes on a real tagine!
I had heard about roasting chickpeas as a salad topping or snack. When i was looking at recipes for them i came across a mixture of spices used in Moroccan foods. Tired it, loved it.
