I can’t believe I am doing this…but here I am with a post with photos from my iPhone. My camera is packed away somewhere and all I can find is the battery and my lenses. I opened 3 different boxes looking for the camera body, but so far all I have found is shoes and a box full of chocolate and wine.

The movers are showing up at my front door at 8am tomorrow, which means I am desperately trying to get every last thing I own into a box. I have managed to tape a cat in a box full of towels (it was an accident -I swear!), break 2 prop plates, and drink a whole bottle of wine in the span of 2 hours.

So with my stress level at an all time high, I decided there was only one thing to do. Throw some random ingredients in a pot, heat it up, and drop it onto wax paper and see what happens. I needed chocolate, all my cookie sheets and muffin pans were already packed up, and all I had was a sauce pan…thus the Nutella No-Bake Fudge Cookies were born.

p.s. isn’t thus a stupid word? it even sounds weird when you say it out loud. or maybe I think that because of the bottle of wine I drank. either way, I just said thus.

These cookies are full of chocolate, tasty, slightly strange and fudge-y. They will get you through a chocolate withdrawal pinch and take all of 10 minutes to make. Oh and they make an excellent excuse to avoid packing. πŸ˜€


Nutella No-Bake Fudge Cookies


  • 1 cup sugar
  • 1 tablespoon cocoa powder
  • 4 tablespoons butter
  • 2 cups old fashioned oats
  • 1/4 cup milk
  • 1/2 cup nutella
  • 1 teaspoon vanilla
  • 1 heaping cup mini marshmallows


In a large non-stick saucepan, bring sugar, cocoa powder, butter, oats and milk to a boil. Boil steadily for 2 minutes, then remove from heat.

Stir in nutella, vanilla, and marshmallows. Continue stirring until marshmallows have melted. Drop mixture by heaping tablespoonfuls onto wax paper (or parchment paper) and allow to cool completely.

Eat immediately or store in an airtight container for up to 5 days.
