Pumpkin French Toast Roll-Ups: french toast is filled with a sweet pumpkin pie filling, rolled up, then pan fried in butter and tossed in sweet cinnamon sugar!

Pumpkin French Toast Roll-Ups

If you love pumpkin, I have the most epic new breakfast idea for you: Pumpkin French Toast Roll-Ups!

You only need a handful of ingredients and just a little skill to whip these french toast roll-ups up. The kids can help too!

Quickly whisk together an easy pumpkin pie filling and stuff it inside of white bread that we roll up. 

Dunk the roll ups into an egg mixture, pan fry them in butter and toss them in a cinnamon sugar mixture.

The inside of these Pumpkin French Toast Roll-ups are super soft and filled with a sweet pumpkin pie filling seasoned with pumpkin pie spice.

The outsides are just a little crispy and generously coated in cinnamon sugar. 

Dip them in syrup or serve them just as they are with the sweet cinnamon sugar coating.

Served warm, these french toast roll-ups are the perfect hand held breakfast treat!

Pumpkin French Toast Roll-ups Ingredients

  • pumpkin puree
  • granulated sugar
  • pumpkin pie spice
  • cinnamon
  • white sandwich bread
  • eggs
  • milk
  • butter

You probably already have all the ingredients you need on hand to make these french toast roll-ups.

Like most pumpkin baking recipes, you want to use pure canned pumpkin puree. You do not want to buy a can of pumpkin pie filling.

However, if you already have pumpkin pie filling on hand and need to use it up, you can use it instead!

Just skip adding any extra sugar or pumpkin pie spice to it and fill the roll-ups with it straight form the can.

How to make Pumpkin French Toast Roll-Ups:

The first and most important step is to cut the crust off the white bread and then flatten it with a rolling pin.

Fill each slice with the pumpkin pie filling and then roll them up and dunk them in an egg and milk mixture.

Quickly place them in a hot buttered skillet and cook in batches of 4 or 5 at a time, turning until rollup is browned.

Toss the french toast roll ups immediately into cinnamon sugar, and roll until completely covered. Serve immediately!

Can you prep or make them ahead and reheat?

Short answer: Nope! Sorry, you just can’t.

If you prep them ahead, the insides are going to get soggy from the filling.

If you make them ahead and reheat, they again are going to get soggy and the overall texture will be lost.

They are best made fresh and served immediately while still warm!
