This may be the best dessert bar recipe, ever! These easy, fudgy chocolate brownies are topped with a light and fluffy raspberry buttercream layer and a creamy chocolate ganache.
A girlfriend of mine was telling me that she only goes to the store twice a month. We are at the grocery store at minimum twice a week. MINIMUM. It’s only Wednesday and I have gone to the store three times already. I try to plan out our week, but with a food blog, two hungry toddlers and a giant husband…I always run out of something.
On one of my last grocery runs, the girls were with me and we came home with a box of brownie mix. I have NO idea when they added it to our cart, but I can’t fault their choices. I didn’t even notice until we got home. Ellie decided to start screaming at the check out because a sweet old man tried saying hi to her — so I was a little distracted. That kid is seriously a pistol…and she hates strangers.

I ended up taking that box of brownie mix and making these amazing Raspberry Chocolate Brownies. Hot damn — they are good! A fudgey brownie layer, followed by a creamy raspberry layer, and all topped with an easy chocolate ganache. Over the top good.
Depending on the raspberry preserves you use, the raspberry layer may not be as vibrant as you want it. If color matters to you, add just a drop of Wilton Rose Icing Color (also sold at Michaels or Walmart). Then you will have a gorgeous raspberry pink center!

I have orange marmalade. Do you think that would work instead of the raspberry jam? Chocolate and orange work well together!

I used to love sneaking stuff in the grocery cart! & as far as grocery shopping – I limit myself to once a week, but I could certainly up it. These brownies are phenomenally gorgeous and I’m sure delicious – I should definitely try a similar version soon 🙂
These look so good. I like that I can use a store bought brownie mix for the base. I might have to try this with strawberry preserves instead.Â
