Snickers Rolos Carmelitas
So New Years resolution time has come and gone and for the first time I am thinking about more than just dieting/working out. Sure, I want to do those things too, but I always want to do those things.
Instead, this year, I am making a whole new kind of resolution. My big resolution is to stop comparing myself to others regarding my work. With social media, it’s impossible not to see what amazing opportunities are being given to others. What trips others are going on…what new clients they are working with…or what offers they are being given.
It is often hard for me to remember how far I have come and how much I have accomplished myself. It’s so easy to just begin comparing myself and wondering — why not me? So this year, I am stopping that. I want to be proud of myself.
At the end of the day, I am fortunate enough to get to work out of my home and raise my babies myself. I wrote two cookbooks. I have been published in magazines and I was even on TV! And best of all, I get to make delicious food for my friends and family and then share it with all of you. What more could a girl want?
This Carmelitas Recipe Is The Best Decadent Dessert
These Snickers Rolos Carmelitas were a mastermind dreamed up by myself and my dear friend Kerri. We started making them with just Rolos…and then decided they needed to truly be over the top and added a bag of Snickers to them as well.
They are truly, insanely decadent. If you aren’t a snickers fan, I would just double up on Rolos. But either way, you can’t go wrong with a buttery oatmeal crust with chocolate and lots of caramel bites mixed in!
Snickers Rolos Carmelitas
If you love decadent desserts, these Snickers Rolos Carmelitas are for you! These Carmelitas are stuffed with layers of caramel rolos and mini snickers!
Ingredients
- 3/4 cup butter (1 1/2 sticks), melted
- 3/4 cup packed brown sugar
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup old fashioned oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 11.5 oz bag mini snickers, unwrapped
- 12 oz bag rolos, unwrapped
Instructions
Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil or parchment paper and grease with butter or non-stick spray.
In a large bowl, whisk together melted butter, brown sugar and vanilla. Add the flour, oats, baking soda and salt. Stir until combined.
Add half of the mixture to the prepared pan and press to flatten. Bake for 10 minutes.
Remove from oven and layer in the unwrapped snickers and rolos. I alternated in snickers and rolos to create one even layer. Evenly crumble the remaining oatmeal mixture over the top of the snickers/rolos.
Bake for 16 to 18 minutes, or until edges are beginning to brown. Remove from oven and allow to cool completely before slicing. Store in airtight container for up to 1 week.

recipe note: you might have a few snickers and rolos leftover at the end...if you do, consider them your pre-dessert snack. ;-)
