Steak and Sweet Potato Hash
I have a confession…the babies are 7 months old and we are just now doing the transition to their cribs from their rock & plays. I know most people do it WAY earlier, but Ellie has terrible reflux and it is finally starting to slowly get better. They are starting to creep up on the weight limit and we knew we had to bite the bullet and do it.
Combine that with two teething babies? WHOA. Let’s just say I terribly miss the newborn baby days where they went back to sleep after every single bottle! And even in spite of all the issues with the transition, I still would use a rock & play again and again and again. It was our life saver for the first 7 months! Just wish they made a toddler size version. 😉
This Easy Breakfast Is Perfect For Using Up Leftover Steak
So with our constant sleep deprivation, I haven’t been to the grocery store like normal. I didn’t have anything to make us our classic Sunday breakfast of pancakes.
I started scrounging around the fridge and wound up with an idea in my head for a hash using frozen sweet potato fries and the left over beef tenderloin my Dad had grilled for dinner a few nights before.
It was so much better than I would have ever guessed! We enjoyed it so much that I can’t wait to have more leftover steak to have it again!
The recipe is more of a guideline of what I did. Use whatever you have handy…or if you know you are going to possibly have leftover steak buy some sweet potato fries. You won’t regret it!
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1/4 cup chopped yellow onion
- 1 heaping handful of frozen sweet potato fries
- salt and pepper, to taste
- 1/4 cup shredded mozzarella cheese
- left over steak, chopped
- fried egg
In a large non-stick skillet over medium-high heat, add olive oil and cook garlic for 30 seconds. Add onion and cook until onion is golden in color, about 8 minutes.
Add sweet potato fries and cook until soft, about 10 minutes, stirring as needed. Remove from heat and add salt and pepper, cheese and steak.
Top with a fried egg and a little chopped cilantro. Enjoy!
To heat your leftover steak, I use the same pan that I fry my egg in. Since the pan is still hot from frying the egg (and the steak is cut in small pieces) it only takes a minute or two!
