Achiote Chicken

This easy Mexican recipe is bursting with flavor!  Despite the red color, it's not overly spicy and you'll be drooling before it's even done cooking!

WHAT YOU'LL NEED

Roma Tomatoes White Onion Lime Juice Achiote Paste Garlic Seasonings Boneless, Skinless-Chicken Thighs Olive Oil Cilantro

Step 1. Blend achiote paste, tomatoes, onion, garlic, lime juice, cumin, salt, and pepper until smooth.

Step 2. Put chicken thighs in a Ziplock bag, and then pour the marinade in.

Step 3. Squeeze as much air out of the bag as possible, and then place it in the fridge to marinate.

Step 4. Dice some onion and mince some garlic. Then cook in a skillet over medium heat.

Step 5. Add the chicken and achiote marinade to the pan and let it cook for 5 minutes.

Step 6. Flip the chicken over and cook for another 8-10 minutes, until the sauce is thick.

Plate the Achiote Chicken with your favorite side dishes, and top with minced cilantro. Dig in!
