What is Chorizo?

Mexican chorizo is a kind of sausage made from ground pork (and sometimes a mixture of ground pork and beef). Mexican chorizo is commonly served with eggs for breakfast, but is also used in tacos and tortas.

WHAT YOU'LL NEED

Dried Chiles Vinegar Seasonings Ground Pork Cooking Oil

Step 1. Boil the guajillo and ancho chiles for 8-10 minutes, until soft.

Step 2. Blend the chiles and seasonings until smooth.

Step 3. Mix the ground pork and sauce.  Cover and let marinate 8-24 hours.

Step 4. Cook in a skillet over medium heat for 6-8 minutes, stirring often.

Chorizo is tasty on its own, and it is also a great addition to tacos, eggs, and burgers!
