Huevos a la Mexicana (Scrambled Mexican Eggs)

What are huevos a la mexicana?

These scrambled Mexican eggs are named as such because they have ingredients from every color in the flag - green jalapeños, white onions, and red tomatoes!


You'll need eggs, Roma tomatoes, jalapenos, and a few other simple ingredients to make this easy recipe.

Step 1. Add the onion, tomatoes, and jalapeño to the pan. Cook them until softened.

Step 2. Pour the whisked eggs into the pan. Stir slowly and cook until set to taste.

Step 3. Garnish with cilantro and queso fresco.

Serve with a side of refried beans and/or corn tortillas, if desired, and enjoy!
