what is pasta primavera?

Pasta primavera is an American dish that was invented in the 1970s. ‘Primavera’ is the Italian word for springtime, and it references all of the freshly-grown spring vegetables that are included in the meal.  

WHAT YOU'LL NEED

Pasta Pasta Water Olive Oil Seasoning Butter Vegetables White Wine Vinegar Garnishes

Step 1. Cook the pasta according to the package directions.  Reserve 1 cup of cooking water before draining.

Step 2. Toss the pasta with oil, salt, pepper and oregano.

Step 3. Melt the butter in a skillet and sauté the carrots and onions, followed by the bell pepper and broccoli.

Step 4. Add the squash and tomatoes, white wine vinegar and seasonings and cook for 3-4 minutes.

Step 5. Stir in the pasta and  reserved pasta water. Garnish with parmesan and fresh parsley and serve!

Pasta Primavera is a meal that can be easily customized.  Try using a different pasta, some other veggies, or even add some meat!
