What are pineapple coconut bars?

This easy dessert recipe is very summery and tropical, with a sweet shortbread crust and thick pineapple-coconut filling. It’s like your favorite beach cocktail, in dessert-bar form!

WHAT YOU'LL NEED

You'll need sweetened, shredded coconut and a few other simple ingredients to make this easy recipe.

Step 1. Mix crust ingredients in a stand mixer for 3-5 minutes, until a smooth dough forms.

Step 2. Spread the dough into a baking pan and bake it for 15 minutes, then take it out and set aside.

Step 3. Add all of the filling ingredients in a medium-sized mixing bowl, and stir to combine.

Step 4. Pour the filling on top of the par-baked crust, and sprinkle shredded coconut over the top.

Step 5. Return the baking dish to the oven, and bake for 25 to 30 minutes, until the top is lightly browned.

Let the bars cool before cutting with a sharp knife and serving. Enjoy!
