Pulled Pork Quesadilla

Easy recipe for leftover pulled pork

These Pulled Pork Quesadillas are loaded with melty cheese, caramelized onions, BBQ sauce, and shredded pork sandwiched between two flour tortillas.

Step 1. Cook the onions in a large pan with olive oil until golden brown and caramelized.

Step 2. Add a pinch of brown sugar, and season with salt and pepper to taste.

Step 3. Lay 4 tortillas out on a flat surface. Sprinkle them with cheese, then caramelized onions and pulled pork.

Step 4. Crisp the assembled tortillas in a pan over medium heat for 2-4 minutes each side.

Slice the quesadillas into quarters. Then drizzle with BBQ sauce to taste, serve and enjoy!
