PUMPKIN PIE POPS

WHAT ARE PUMPKIN PIE POPS?

Pie pops are essentially pie lollipops, or mini pies on a stick. These cute individual pies are fun to eat, and you can enjoy a little sweetness without eating a whole slice of pie. Pumpkin Pie pops are great for fall, but you can make any flavor you like (apple pie, cherry pie, key lime pie, etc.).

WHAT YOU'LL NEED

Pumpkin Puree Brown Sugar Salt Pumpkin Pie Spice Cream Cheese Eggs Vanilla Extract Pie Crust Lollipop Sticks Turbinado Sugar

Step 1. Combine the filling ingredients in a medium bowl, then heat in a small saucepan until thickened.

Step 2. Add cream cheese, egg, and vanilla and mix until smooth.  Set aside.

Step 3. Roll out the pie crust and cut out pumpkin shapes.  Place on a sheet of parchment paper.

Step 4. Place lollipop sticks in the center of each pumpkin.  Add a spoonful of filling and then add the top crusts.

Step 5. Use a fork to seal and crimp the edges of the crusts.  Brush with egg and sprinkle with turbinado sugar.

Step 6. Bake for 12-15 minutes, until golden brown.  Cool on the pan.

Place the pies in a glass canning jar filled with sugar as a festive way to display and serve.
