Rajas  (Creamy Roasted Poblanos)

What are rajas?

Rajas are sliced poblanos in a cream-based sauce, loaded with corn, onion, and cheese! Served with chips or warm tortillas, they go from an appetizer to the main course in seconds.

WHAT YOU'LL NEED

You'll need poblano peppers, white onion, and a few other simple ingredients to make this easy recipe.

Step 1. Place 1 poblano per burner on stove and cook until blackened. Then place them in a bag to let steam.

Step 2. Peel the blackened poblano skin. Then remove the seeds and stems, and slice into 1/2" thick strips.

Step 3. Cook the onion, sliced poblanos, yellow corn, milk, and cheese in a large pan over medium heat.

Remove from the heat and serve immediately as desired. Enjoy!
