Jorge has been gone for two weeks now and boy have I missed him been having fun. I have watched some classic chick flicks, season 2 of Sex & The City, and even broke out The Notebook (since Jorge absolutely abhors that movie). Last night I read magazines for hours in the bathtub till I had more wrinkles than Betty White. I have had cereal for dinner, opened multiple bottles of wine before finishing the first bottle I opened, and shopped online wayyyy too much.

But those aren’t the only things I do when he is gone. I also make sure and stuff my face with everything he doesn’t like! I have eaten a smorgasbord of pickles and olives over the last two weeks. I really think I may start sweating vinegar soon. I have eaten breakfast for dinner at least 8 times, which is something Jorge can not stand. And I have also made sure to eat as much bleu cheese as I can get my hands on. I have put it on top of burgers, on crackers with wine, and in every salad I made.

So as my last food celebration before Jorge comes home, I decided to make this Date, Pecan, & Blue Cheese Pizza. I loved it! OhMy-Bleu Cheese-God this is amazing. This little pizza has so much going on with it, you would worry that it might actually be too much. But somehow, all these strong flavors work together to provide a delicious dinner for a effing hot warm summer night.

P.S. So uhh…I try to sound all big and bad, but I will be so happy when Jorge is finally home! The life as a consultant’s wife is not always the easiest, but it sure does make the heart grow fonder. And it will be really nice to have someone else to help walk the dog all the time. πŸ™‚

Date, Pecan, Blue Cheese Pizza

Recipe Note: Joseph’s Flax, Oat Bran & Omega 3 Pita Bread is awesome! It is soft, delicious, and only 60 calories per Pita. It is also loaded with a ton of Omega-3’s. I have found it at lots of grocery stores, even Walmart!
This particular pita bread is thinner than most pita and not as “doughy” and it is also whole wheat. If you can not find this pita bread at your grocery store, try finding one close to it. You really want the pita to be thin!


1/2 cup pecan halves
drizzle extra virgin olive oil, about 1 tablespoon
1/4 cup brown sugar
1/2 teaspoon garlic salt
1/2 teaspoon fresh, coarsely ground pepper
4 Joseph’s Flax, Oat Bran & Omega 3 Pita Bread
4 tablespoons Smuckers (sugar free) peach preserves
1/2 cup blue cheese crumbles
5 sun-ripened dates, sliced
2 cups arugula


In a small saucepan, combine the pecan halves, a drizzle of olive oil, brown sugar, garlic salt, and pepper. Cook over medium-high heat, stirring constantly, until the brown sugar mixture has caramelized on top of the pecans. Transfer to a sheet of parchment and allow to cool completely.

Spread a thin layer of peach preserves atop your pita. Sprinkle a handful of bleu cheese on top. Add your candied pecans and sliced dates. Top with a ton of arugula. Serve immediately.
