These golden and crispy Air Fryer Coconut Shrimp are a fun, hand-held appetizer for game day. They're made in an air fryer for a healthier and totally satisfying snack.

Ingredients
2large eggs
2tablespoonslime juice
1 ½cupcoconut shavings, unsweetened or sweetened depending on preference
½cuppanko breadcrumbs
¼cupall-purpose flour
1teaspoonsalt
1teaspoonground black pepper
1teaspoondried parsley
12ounceslarge shrimp, peeled with the tail on
Instructions
If needed, preheat air fryer to 375°F.
In a medium sized bowl, whisk together the eggs and lime juice, set aside.
In another medium sized bowl, stir the coconut, breadcrumbs, flour, salt, pepper and parsley until well combined.
One at a time, dip each shrimp into the egg mixture, then drain and immediately dip it into the coconut mixture and press the coconut onto the shrimp. In batches if needed, place shrimp in a single layer on greased tray in air-fryer basket and then mist the shrimp with non-stick spray (or olive oil spray).
Fry in the air fryer at 375°F for 4 minutes, then flip the shrimp and mist the tops again with non-stick spray (or olive oil spray) and fry for 3 more minutes or until crispy and golden. Remove the shrimp from the basket and repeat the cooking process, if needed depending on how many shrimp you have or your size of air fryer.
Serve with your favorite sweet chili sauce and garnish with freshly chopped cilantro or parsley, if desired.

Storing: These coconut shrimp can be stored in an airtight container in the fridge for up to 4 days.To reheat them, air fry them again at 375°F for 2 to 3 minutes.
