Step 1 - Thaw and Prepare Thaw in fridge, 24 hours for every 5 pounds. Adjust time as needed. Brining is optional but requires more time. Remove organs, rinse turkey inside and out, pat dry with paper towels.
Step 2 - Filling TPlace aromatics into the cavity of the turkey. Cross the legs and tie together with the twine to hold in the aromatics.
Step 3 - Seasoning Gently separate skin and rub half of oil and seasonings under skin. Use the rest on outside of bird. Add butter squares under loosened skin.
Step 4 - Cooking Cook uncovered 30 minutes at 500°F, then lower temp to 350°F. Cook with foil shield on until internal temperature reaches 165°F.
