Ingredients
1loaf Italian bread
1cupunsalted butter, softened
½teaspoonsalt
1teaspoonItalian seasonings
¼teaspooncrushed red pepper flakes
2tablespoonsgarlic paste
½cupshredded mozzarella cheese
½cupgoat cheese
Fresh parsley, for garnish
Instructions
Preheat the oven to 350°F. Slice the Italian bread in half lengthwise and place cut side up on a large baking sheet.
Combine the butter, salt, Italian seasoning, red pepper flakes, garlic paste, and cheeses in a medium bowl and mix together with a fork until evenly combined.
Use a rubber spatula to spread the butter mixture out evenly on the cut sides of the bread.
Bake for 10 to 12 minutes, until the edges of the bread should “just” start to feel crisp.
Then turn your oven to a LOW broil and broil bread for 2 minutes until the cheese begins to lightly brown and the edges of the bread really crisp up.
Remove from the oven and slice and serve warm.
Notes
You can use salted butter, but make sure to omit the added salt. I find that the goat cheese has a lot of tang and therefore prefer to control the salt in this recipe.
The crushed red pepper flakes add flavor but not much heat.
I like to use a fork and a bowl to mix the butter mixture, but it can also be done with a hand mixer, stand mixer, or even in a food processor.
Garlic paste is usually found in the product section with the herbs.
3 minced garlic cloves may be used in place of the paste but I think that the pasta gives a smoother and more even flavor.
