Instructions
Wash your potatoes and cut them into wedges. You don’t need to peel them.
In a medium bowl, coat potato wedges with olive oil. (I did this by brushing each side of the potatoes with a pastry brush, but you can also toss them in the oil. Just make sure to evenly coat them for best results.)
In a small bowl, whisk to combine the onion powder, garlic powder, Italian seasoning, sea salt, paprika, and ground pepper in a small bowl. Sprinkle your spice mixture over your oiled potato wedges, little by little. Make sure to move the potato wedges while sprinkling them to cover all the sides evenly.
Line your potato wedges into your air fryer basket, with the potato skin facing down. Cook the potato wedges at 400º F for 15-18 minutes, until golden and cooked through.
Serve immediately topped with grated parmesan cheese and minced parsley on top, if desired! Enjoy!
Notes
Pastry Brush: A pastry brush is great for covering all the wedges' surfaces with a thin layer of oil. Alternatively, place the potato wedges in a zip-top bag with the oil, and shake well until the wedges are thoroughly coated.
Air Fryer Timing: Depending on your air fryer model, it might take longer or less time to cook. Adjust the time as needed.
Perfect Consistency: In my experience with this recipe, I would recommend starting with 15 minutes of cooking time, and then trying one of the potato wedges to check if more cooking time is needed. The perfect potato wedge consistency is crispy on the edges and tender on the inside.
To Shake or Not to Shake: Air fryer recipes often say to shake the basket. If your air fryer basket is big enough to line up the potato wedges with the skin facing down, that’s not really necessary here. If you have to cook them in more than one layer, I definitely recommend shaking the basket halfway through to have better results.
Preheating: Some air fryer models require preheating, and some don't. Check the user manual for your air fryer to see if you need to preheat yours before cooking.
Storage: Store leftover potato wedges in an airtight container, for maximum freshness. Keep them in the fridge for up to 5 days. Reheat in the air fryer or oven at 350ºF until warmed through.
