Ingredients
2lbsgolden potatoes, cut into 1 inch pieces
¼cupolive oil
4garlic cloves, minced
1tablespoonminced fresh rosemary
1tablespoonminced fresh thyme
½tablespoonkosher salt
½tablespoonblack pepper
Fresh parsley for garnish

Instructions
Bring a large a pot of salted water to a boil. Add the potatoes and bring to a boil again. Cook for 5 minutes.
While potatoes are boiling, prepare a baking sheet with parchment paper and preheat the oven to 425°F.
Once the 5 minutes is up, drain the potatoes and add them to a large bowl. Combine potatoes with olive oil, garlic, rosemary, thyme, salt and pepper. Toss potatoes to coat and evenly spread onto the prepared baking sheet.
Bake for 30 minutes, tossing halfway through, until crisp on the outside and fork tender.
Serve hot. Garnish with fresh parsley, if desired.

Storage:
Fridge: Store the fudge in an airtight container, in the refrigerator, for up to 5 days.
Freeze: Freeze potatoes in an airtight container for up to 3 months.
Reheat: In the microwave, air fryer, or in the oven at 425°F for about 10 minutes, until hot.
Notes:
You can use any mixture of herbs you like. I love rosemary and thyme the best, but any herbs you love will be delicious!
You can use butter in place of the olive oil.
Do I have to parboil my potatoes? Nope! You can skip it and pop them right into the oven if you prefer. Parboiling will help you get an extra crisp exterior to your potatoes, but it is not a necessary step.
Can I parboil my potatoes in advance? YES! I always do this before a dinner party. You can par boil your potatoes the day before. Let them cool and then store them in an airtight bag in the fridge.
