Ingredients
For the Dressing:
⅓cupolive oil
2tablespoonsred wine vinegar
2tablespoonslemon juice, about ½ lemon
1teaspoondried oregano
1garlic clove, minced
Salt and pepper, to taste
For the Pasta Salad:
1cuporzo pasta
1smallEnglish cucumber, cut in half lengthwise and then sliced
1cupcherry tomatoes, sliced in halves
½red onion, diced
½cuppitted Kalamata olives, sliced
½cupcrumbled feta cheese
4baby bell peppers, sliced (or one regular bell pepper)

Instructions
Cook the orzo according to package directions. Drain and set aside to cool, about 10 minutes.
Mix all the dressing ingredients in a small bowl or jar. Whisk or shake with lid on vigorously to combine.
In a large bowl, mix cooled orzo, vegetables, Kalamata olives and cheese. Add about half of the dressing and toss to coat. Keep refrigerated for about 2 to 3 hours and add remaining dressing before serving.
