Notes
Storage: Store in an airtight container for up to 1 month in the refrigerator.
Demerara Syrup: For drinks with a tropical twist, try making simple syrup with brown demerara sugar. This gives the syrup a rich, toasty flavor that goes well with tropical flavors.
Vanilla Syrup: For vanilla simple syrup, just drop a vanilla bean into the sugar and water as it cooks.
Fruity Simple Syrup: Add a cup or so of your favorite fruit to the syrup while it cooks, and then run it through a fine mesh strainer afterward. Pro tip: don’t mash the fruit as you strain the syrup - it will cause fiber from the fruit to run into your syrup jar, which will make the syrup cloudy instead of clear.
Rich Simple Syrup: This recipe uses a traditional 1:1 ratio. That’s one part sugar to one part water. But you can double the amount of sugar for a 2:1 ratio, also known as “rich” simple syrup. This will be thicker and sweeter, and the added texture adds a pleasant mouthfeel to cocktails.
Ice Bath: If you need to cool the syrup down in a hurry, you can pour it into a small mixing bowl instead of a jar, and then nestle that into a larger mixing bowl containing an ice bath. Stir it occasionally as it cools down to help cool it faster. Once it’s cool, use it and store it.
