Ingredients
3lbssweet potatoes, about 4-5 potatoes
1cupwater
4tablespoonsbutter, unsalted
¾cupheavy cream
¼cupmaple syrup
½teaspoonground cinnamon
½teaspooncoarse salt
⅛teaspoonground clove
⅛teaspoonground nutmeg
½cupchopped pecans, divided
Instructions
Wash, peel, and dice the potatoes into large pieces.
Place potatoes into the bottom of the Instant Pot and pour in the water.
Lock on the Instant Pot lid, set the valve to seal and turn on manual high pressure for 10 minutes. Once the potatoes have finished cooking, do a quick release for the steam. Drain any excess liquid from the potatoes and return them to the pot.
Stir in the butter and mash the potatoes to your desired consistency.
Pour in the cream, syrup, seasonings and ¼ cup of the chopped pecans until well combined. Sprinkle remaining pecans on top of the potatoes and serve.
