This tender and juicy Chicken Souvlaki is a classic Greek street food. The marinated chicken is packed with Mediterranean flavor and will bring the taste of Greece right to your kitchen!

Ingredients
1lb.boneless, skinless, chicken breasts or thighs, cut into bite size pieces

Instructions
Combine all ingredients in a ziplock bag and shake well to mix. Add chicken and shake to ensure the marinade is covering chicken. Allow to marinate in the refrigerator overnight, or for at least 6 hours. You can also do this in a tightly covered bowl.
Remove chicken from marinade, and toss the leftover marinade. Thread chicken onto skewers and grill until cooked through on an outdoor grill, or on the stove top with a grill pan. Chicken is done once it is cooked through and reaches 165°F on an instant read meat thermometer. See notes below to cook in oven or air fryer.
Let chicken rest for 5 minutes wrapped in foil, then serve as desired! This step seems unimportant, but it will ensure extra juicy and tender chicken.

To Store: You can store chicken souvlaki in an airtight container, refrigerated for up to 5 days. I prefer to remove the chicken from the skewers because it's easier to store that way. You’ll also want to keep the chicken separate from any toppings or tzatziki sauce.To Freeze: Prep the chicken in marinade and place it in a freezer friendly ziplock bag (with the marinade) and freeze it for easy meal prep later. When you are ready to make the chicken souvlaki, pull it out of the freezer and let it thaw in the refrigerator overnight. Cook according to recipe directions.Air Fryer or Oven: In the air fryer, cook on 370°F for about 20 minutes, flipping halfway, until cooked through and a meat thermometer reaches 165°F. In the oven, bake the chicken in a baking dish at 400°F for about 20 minutes, flipping halfway, until cooked through.
