This fluffy, rich and creamy Strawberry Mousse is made with just three ingredients and is absolutely loaded with fresh strawberry flavor in each bite!

Ingredients
1poundfresh strawberries, plus extra for garnish
⅔cupgranulated sugar
10ozheavy whipping cream
whipped cream, optional garnish

Instructions
Remove stems from strawberries and slice in half. Add strawberries and sugar to a blender or food processor. Puree until smooth. Remove 3/4 cup of puree and set aside.
Using a hand mixer, beat heavy whipping cream in a large bowl until stiff peaks form. Then fold in remaining puree gently into whipped cream (making sure to reserve the 3/4 cup from step 1).
Divide reserved strawberry puree into the bottom of 4 large glasses, or 6 small glasses, and top with strawberry mousse. (You can also use a large bowl or trifle bowl.)
Cover and chill for about 2 hours. Serve garnished with whipped cream and extra strawberries, if desired.
Notes
Storage: Store in the fridge, wrapped tightly with plastic wrap, for up to 3 days. Freezing is not recommended as it can alter the creamy texture. Make Ahead: If you plan on storing it for a day or two before serving, I highly recommend following the directions below for using gelatin or instant pudding to stabilize the mousse! This will help it hold it's fluffy texture for much longer.Gelatin Addition: If you want the mousse to stay firm for longer, you will need a stabilizer for the whipped cream. I recommend adding a teaspoon of powdered plain gelatin, melted in a tablespoon of water, for a firmer mousse that will store for longer. You can also use 1 or 2 tablespoons instant pudding added directly to the whipped cream before beating.Cool-Whip: If you prefer, you can use thawed whipped topping instead of whipped cream. If you do this swap, reduce the amount of sugar in the strawberry puree to 1/3 cup.Different Fruits: This is a great base fruit mousse recipe and you can make it using almost any fruit or a mix of berries.Add Zests or Extracts: You can also add fresh zest from citrus (lemon would be great with this strawberry version!) or even added extracts like vanilla or almond.
