I will be the first to admit it — I am obsessed with rainbow buttercream sprinkles.
So are these Funfetti Cookies with Pink Cake Batter Frosting really that big of a surprise?
They shouldn’t be since I have made Confetti Cake Mini Donuts, Cake Batter Martini, Cake Batter Oreo No Bake Cheesecake and Cake Batter Truffles.
I could eat cake batter flavored things for the rest of my life and be so happy.
I made these extra big cookies with two big tablespoons of dough because I wanted them to look like Mini Cookie Cakes.
I always wanted one of those big cookie cakes you see at the mall, but I know I could never eat that much cookie.
You are probably thinking — well duh, Jess. You are supposed to share the cookie cake, it’s not a single serving.
And sure, you’re right…but if it’s my birthday, I want to eat the whole cake myself.
So I made mini cookie cakes that I could easily eat one (…or two) of by myself.
And I made them filled with my favorite rainbow sprinkles. They have no brown in them — those are my least favorite — and they come in a massive bag.
Funny sprinkle story — when I was pregnant, after every OB appointment, I would go get a DQ Cone with sprinkles.
And then I would request EXTRA sprinkles on the side. And one time they forgot my extra sprinkles and I cried.
Y’all, I am not a cryer. It was highly embarrassing, but that is how much I love sprinkles.
You are going to love these Funfetti Cookies. They start with a perfect sprinkle filled soft sugar cookie.
Then you top it with some cute swirls of Cake Batter Frosting (with real cake mix added in) and more sprinkles…of course. ;-)

Pregnancy hormones do funny things… ;) These look soooo good, I want to make them for ALL THE DAYS from this day forward.

These are so fun and so so pretty. Sprinkles makes everything taste better!
“I could eat cake batter flavored things for the rest of my life and be so happy.” Me, too! And I also love rainbow sprinkles! Whenever co-workers bring in doughnuts , they always buy one sprinkle doughnut just for me. Ha ha. These mini cookie cakes are so fun! I may just decide to make them for my own birthday when it rolls around this year! :)
How pretty and how much fun for the kiddos. I think I’ll make these for the grandkids end of school swim party. Thanks for sharing.
Wishes for tasty dishes,
Linda
