Sticky Toffee Date Coffee Syrup is sticky toffee pudding in a jar that you get to stir into your coffee! No cooking, no straining, just dates, toffee bits, and hot espresso blended smooth. It melts into hot coffee like buttery caramel and is just as good over ice.

I first made the viral date coffee syrup with just dates and espresso, like everyone was doing. It was tasty, but it was not really sweet enough for my taste. I thought about stirring in some brown sugar to fix it, but then it hit me: what if I added toffee bits instead and turned the whole thing into a sticky toffee pudding flavor?
It worked wonderfully and now I am truly obsessed with this Sticky Toffee Date Coffee Syrup. I’m NOT a morning person, but this stuff has my feet hitting the floor the second my eyes open. Sticky toffee pudding is one of my favorite desserts ever, and now I can have all of that warm, sweet, cozy, caramelized flavor in my cup of coffee!

Ingredient Notes
- Espresso: You can use hot water or hot brewed coffee instead, but I like to use espresso because it stays concentrated. This way the syrup adds flavor without watering down your coffee. If you go with brewed coffee or a moka pot, just make it nice and strong.
- Toffee Bits: Bits o’ Brickle is what I use. These are the little toffee bits in the baking aisle with no chocolate coating.
- Dates: Use soft, fresh dates and make sure to remove the pits. Medjool dates are my go-to because they’re soft and plump and they blend up silky instead of gritty. If your dates feel dry or firm, let them soak a little longer before blending.

SOAK DATES & TOFFEE
Add the toffee bites and dates to a jar and top with hot espresso. Cover and let it soak for at least 2 hours or up to overnight.

BLEND UNTIL SMOOTH
You can use a blender or even a food processor, but I like to use an immersion blender right in the jar.

Jessica’s Tips
- A pinch of salt fixes bitterness. If your syrup tastes a little bitter from the espresso, stir in a small pinch of salt. It balances the bitterness and makes the buttery toffee flavor pop.
- Soak overnight if you can. Two hours on the counter is enough, but an overnight soak in the fridge gives the dates more time to soften and the flavors more time to deepen. It blends even smoother the next morning.
- Blend longer than you think. Keep going until the syrup looks completely smooth and glossy with no visible flecks of date skin. A full minute or two makes a real difference in the texture.

How To Use It In Coffee
Start with about a tablespoon per cup and adjust from there. It’s a concentrated syrup, so a little goes a long way. Taste and add more if you like it sweeter.
- In hot coffee. Stir a spoonful into a fresh hot cup and watch it melt into buttery caramel. The heat loosens the syrup so it blends in smoothly.
- In iced coffee. I just drizzle it on top and stir it in! However, you can also add the syrup to the bottom of your glass, pour in a little hot water or a splash of warm coffee to loosen it, then stir before adding ice and cold coffee.

Ingredients
- ⅓ – ½ cup toffee bits, I used bits o' brickle
- 6 oz pitted dates, about 12 dates
- 4 oz hot espresso, or hot coffee
- pinch of salt, optional

Instructions
- In a jar with a lid, add the toffee bits then top with the dates. Pour the hot espresso over the top and seal the jar with the lid. Set it aside to cool and then soak for 2 hours, or transfer it to the fridge once it’s cooled to soak overnight. (For the smoothest results, I recommend soaking it overnight!)
- Puree the mixture until smooth. I like to do this in the jar with an immersion blender, but you can also transfer it to a regular blender or food processor.
- Serve with your coffee immediately or store in an airtight container in the fridge and use within 7 days. Always give it a good shake before using it in your coffee.
