These Double Mint Brownies taste like they came from a bakery! Fudgy chocolate brownies get all jazzed up with layers of Mint Oreos and Andes Mints to create a sweet, minty, chocolatey bite. Use a box of brownie mix and they’ll only take 10 minutes to toss together!

This easy Mint Brownie recipe reminds me of those classic after-dinner mints, but in rich, fudgy brownie form. We start with a layer of Mint Oreos baked into the brownies. Then while still warm, we melt a generous layer of Andes Mints over the top and sprinkle on even more Oreos. The end result is a decadent mint chocolate brownie that’s so good, you’ll never have leftovers!

  • Brownie Mix: You will also need the ingredients (eggs, oil, etc) called for on the back of the box to make the brownie batter. I like to use Ghirardelli brownie mix, but use your favorite. If you want to go the extra mile, you can make homemade brownies instead!
  • Mint Oreos: You will use one whole package of Oreos as we layer them in the brownies and chop more for the top.
  • Andes Mints: Make sure you get enough! You’ll need about 56 mints total, which is 2 standard bags. You want to get a good thick layer of them melted on top to hold the chopped Oreos onto the brownies.

How to Make Mint Brownies

Even if your pan is nonstick, grease it well. Or for even easier removal, line your 9-inch pan with parchment paper and leave an overhang. This makes lifting the brownies out simple.

Don’t over-bake the brownies. To keep them soft and fudgy, pull them out when the center is just set and a toothpick has a few moist crumbs. They’ll continue to cook slightly as they cool.

Have the Andes Mints unwrapped and ready to go. Spread mints on top of the brownies as soon as they come out of the oven. Let them sit for a couple of minutes before trying to spread them. The residual heat often softens them enough so you don’t have to put the brownies back into the oven.

Spread mints evenly. When spreading the melted Andes mints, use a butter knife, offset spatula, or the back of a spoon for an even layer. Once cooled and hardened, it’s what holds the chopped Oreos onto the brownies.

If looks matter to you, cool brownies completely before slicing. Give the brownies at least an hour for to set. This allows the mint layer time to firm up so you can get clean cuts.

Make Ahead and Storing

If making ahead for a party, you can prepare this mint brownie recipe the day before. In fact, they slice even cleaner the next day once fully set. Avoid refrigerating unless your kitchen runs very warm, as refrigeration can dry them out slightly.

Store leftover brownies in an airtight container at room temperature, they’ll stay fresh for about 4 to 5 days. Make sure they are fully cooled before storing to prevent condensation.

You can also freeze these mint chocolate brownies! I recommend individually wrapping each brownie tightly with plastic wrap or foil. Then transferring them to a zip-top freezer-safe bag, freezing them for up to 3 months. For best results, let brownies defrost at room temperature before enjoying!

Ingredients

  • 1 (18 oz) box brownie mix, plus ingredients to prepare brownies according to package (or 1 batch homemade brownies)
  • 1 (15.25 oz) package Mint Oreos, divided
  • 2 (4.67 oz) package Andes Mints, (56 mints), unwrapped

Instructions 

  • Grease a 9-inch square pan with butter (or line baking pan with parchment paper). Line the bottom of the pan with mint Oreos in an even layer. Chop the remaining leftover Oreos and set aside.
  • Prepare brownie batter according to directions on package. Pour brownie batter on top of oreos and bake until done. Do not over bake. The brownies are done when a toothpick comes out with just a few moist crumbs.
  • Immediately add the andes mints on top. Let sit for a few minutes, then spread in an even layer. If they are not spreadable, return brownies to the oven for 2 minutes to melt a little, then try spreading again.
  • Sprinkle the chopped mint oreos over the top of the andes mint layer. Let brownies cool completely, about an hour. Slice and serve or store in an airtight container for up to 5 days.

Can you freeze these?

Oh my! I made these for tomorrow, St. Pats Day. I doubled the ingredients, baked at 325° for 36min. in a 11×17 glass pan. I will be having 17 ppl for dinner. Update you on their reactions.

Everyone went NUTS over these for St. Pats Day, so I decided to make them for Xmas Eve fam party!

These brownies are amazing and worth every calorie!

But the nutritional information is very inaccurate…each brownie (1/12 of the recipe) can’t be less than 220 calories when the prepared box of brownie mix alone is over 250 each. Once you’ve added in the Oreos (70 calories each with approximately 30 cookies per package) and the Andes mints (25 calories each times 56), you’re over 500 calories per brownie. It’s not just the calories – 1 gram of sugar and 8 grams of fat for a brownie?

These are still very much worth making and enjoying though! It’s just good for readers to know what they’re actually consuming if these numbers matter to them.

I had to laugh at step number 5, where it says “Slice and serve or store in an airtight container for up to a week”. Who will leave those brownies UNEATEN for a week! LOL

It’s a good recipe! I assumed that you bake the brownies at 350 degrees Fahrenheit. (same temperature on the brownie mix box)

Hi Im in Australia and can’t get Andes mints but do you think after dinner mints would work? Not sure if they are they are the same thin but they are a thin rectangle with a thin mint cream in the centre coated in thin dark chocolate.

Had to google Andes Mints, must be a regional thing, but they look similar to After Eights. I suppose any mint/chocolate wafer will work. I think I will definitely make this for my oldest’s next birthday. She loves mint chocolate ice cream. She’ll love this!
