Blueberry Mojito
Ingredients
- ¾ cup fresh blueberries
- 2 oz simple syrup
- 12 fresh mint leaves
- 2 oz freshly squeezed lime juice
- 4 oz white rum
- 8 oz club soda

Instructions
- In a food processor or blender, puree blueberries until smooth. Set aside.
- In a large highball glass (16 oz), muddle together the simple syrup and mint leaves. (Muddling is a technique used to gently mash herbs and/or fruit to release the essence or juices. I recommend using a muddler for best results, however the back of a wooden spoon can be used in a pinch.)
- Divide the muddled simple syrup and mint leaves between two highball glasses. In each glass, stir in 2 oz rum, 1 oz lime juice and 2 to 3 tablespoons of the blueberry puree, to taste.
- Fill glass with ice and then top with club soda. Garnish with mint and blueberries, if desired.

Did you mix blue kool-aid for the picture? I just made the drink with pureed blueberries, and it looked nothing like the drink in your picture.
Ha! Nope, no Kool-Aid. Like I said above the recipe, you can add a drop of blue food coloring for a more potent blue color!

Yep you do use sugar to make simple syrup! However, what he was saying is that instead of using simple syrup (where you melt the sugar into a syrup) – he uses regular granulated sugar in his!
I am not a rum drinker (I’m more of a vodka girl); this would definitely be the exception to the rule.
Made this today for the kickoff of my vacation. My blueberries were not very juicy, so I doubled them. We have had very poor berries so far up here in Canada.
