They are baked in a creamy sauce made with garlic, italian seasoning, heavy cream and two types of cheeses.
While that sounds like it might be a little bit of work, it is not!

All you have to do is stir all the ingredients together and dump it into a casserole dish (or cast iron skillet) and bake it! SO EASY!
This Creamy Baked Brussels Sprouts Recipe was a very happy accident that happened on a lazy Wednesday night.
I had previously made a roasted brussels sprouts gratin a few times and loved it.
However, it was a lot of work to make and was really high in carbs. I had to precook the brussels and make a roux.
Jorge and I try to eat low carb most days and that was not working out for us as a weekly side dish!
SO, I tossed together some brussel sprouts, heavy cream, fresh garlic, seasonings and lots of cheese.
I threw it into my cast iron skillet and stuck it in the oven and let it bake.
I was hoping for the best and preparing myself for a potentially very bad result.
I even warned Jorge we might not have a vegetable that night! Ha!
But as it baked, I saw the top turning a perfect brown on the edges and the bubbling of the cheesy sauce.
And the smell, oh man, it smelled so dang good. We were both standing over it waiting for it to cool enough for us to try a bite!
To say it was good would be the ultimate understatement. It was DIVINE.
Even the girls gobbled it up, which was shocking! They hate baked brussel sprouts normally!
The sauce reminded me of an alfredo sauce, but with so much more flavor.
And the best part? It only took about 5 minutes of effort on my part. Who wouldn’t love that?

For the cheeses, I use a combination of mozzarella and parmesan. These two cheeses combine to be both creamy AND flavorful.
Plus, we add a very healthy helping of heavy cream and fresh minced garlic.

This Creamy Baked Brussel Sprouts Recipe is going to be your new all time favorite vegetable side dish. I dare you not to like it!
- 3 cups Brussel sprouts, bottoms removed and halved
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- salt and pepper, to taste
- 3/4 cup shredded parmesan cheese (or asiago)
- 1 cup shredded mozzarella cheese
- Preheat oven to 400 degrees. Butter a cast iron skillet or a small casserole dish (like a 9×9), set aside.
- In a large bowl, combine all ingredients. Pour into prepared skillet/casserole dish.
- Optional: You can sprinkle a little extra of both cheeses on top if you like it extra, extra cheesy!
- Bake for 25-30 minutes, till bubbly and edges are browned.
- Let rest for 5 minutes and serve!
