Whip up a batch of this beloved restaurant classic and watch it disappear! This is one of my most popular dip recipes and for good reason. It’s seriously addictive! It’s got the best combo of mouthwatering ingredients to make you come back for more and more – cheese, bacon and both sour cream and cream cheese. Try to have just one bite… I dare you! Here’s why eating your spinach has never been so easy:

  • Cream Cheese and Sour Cream: For both of these ingredients, I like to use regular (not low fat) options. You can use low fat if you’d like, but the final result won’t be quite as thick and creamy.
  • Chopped Frozen Spinach: Thaw and squeeze spinach well to remove all the excess moisture. I prefer to press the spinach in a fine mesh sieve, but you can also use a thin clean kitchen towel or cheesecloth to squeeze the liquid out.
  • Bacon: You can use store bought bacon bits or quickly cook your bacon in the oven, drain it well and crumble.
  • Shredded Cheddar and Mozzarella Cheeses: For both of these cheeses, I highly recommend using a cheese grater and grating it fresh off the block for the creamiest results. You can also use Monterrey jack, provolone, gouda, or any good melty cheese.

How to Make Spinach Dip

This hot spinach dip recipe is quick and easy to pull together with just a few simple steps. Below is a quick recipe overview, but please scroll to the recipe card at the bottom of this post for full instructions and to watch the step-by-step video.

  • Mix: In a large bowl, beat cream cheese and sour cream with an electric mixer until smooth.
  • Stir: Add thawed and drained spinach, onion, bacon, salt, pepper, cheddar cheese and half of the mozzarella cheese. Stir to combine.
  • Transfer to dish: Smooth the spinach mixture in a prepared baking dish and top with the remaining shredded mozzarella cheese on top.
  • Bake: Bake for 20 to 25 minutes, until bubbly and beginning to brown on top
  • Serve: Let spinach dip cool for 5 minutes and then serve and enjoy!

Chef’s Tips and Variations

  • Variations: Add a cup of chopped artichoke hearts, drained for hot spinach artichoke dip. Chopped sun dried tomatoes could add another layer of flavor and texture.
  • Fresh Spinach: To use fresh spinach, I recommend using 1.5 pounds of fresh spinach and wilting it down on the stove top.
  • Best Dippers: Scoop up hot spinach dip with crackers (or my low carb crackers), toasted bread crostinis, tortilla chips, or with hard or soft pretzels. You can also enjoy it with veggies like celery and carrot sticks, broccoli florets, and red bell pepper strips.
  • Bread Bowl: You could opt for a hollowed out, sourdough round or Hawaiian bread round for a fun presentation.
  • Leftovers: Spread leftover spinach dip on a ready made pizza crust with grilled chicken for an easy weeknight dinner after the party weekend. It’s also delicious served over buttered noodles!
  • Spinach Dip Stuffed Chicken: Butterfly thick chicken breast and stuff with 1/3 cup spinach dip. Secure with toothpicks and bake at 350ยฐF until internal meat thermometer registers 165ยฐF and juices run clear.

Ingredients

  • 8 oz cream cheese, room temperature
  • 1 cup sour cream
  • 1 package (10 oz) chopped frozen spinach, thawed and well drained
  • 1 yellow, white, or red onion, finely diced
  • 6 strips of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • ยฝ teaspoon salt
  • 1 teaspoon freshly ground pepper

Instructions 

  • Preheat the oven to 375ยฐF. Grease a 8X8 inch baking dish, set aside.
  • In a large bowl, beat the cream cheese and sour cream with an electric mixer until smooth. Add the spinach, onion, bacon, salt, pepper, cheddar cheese and half of the mozzarella cheese and stir to combine.
  • Transfer the dip to the prepared baking dish and sprinkle the remaining mozzarella on top.
  • Bake dip for 20 to 25 minutes, until bubbly and beginning to brown on top. Let spinach dip cool for 5 minutes, then serve with your favorite dippers!

Notes

Storage: Tightly cover the cooled leftovers with plastic wrap, or place in an airtight container, and store in the fridge for up to 4 days.
Prepare Ahead: This dip is a great make-ahead party dip. Assemble it in the baking dish, but do not bake it. Instead, wrap it tightly with plastic wrap or foil and store in the fridge for up to 4 days. When ready to serve, let the dip sit on the counter for 30 minutes before baking as directed.
